I just now found your channel so my question may answered in another video. I can build a tube amp using known transformers and common tubes. My question is how do you chose a transformer when you have incomplete data, no load graphs on useful tubes not generally thought of as audio? I have push/pull Grommes amps with 6GT5, Bogen amps with 6AV5 and I know of several other oddball amps that sound wonderful. The Standel comes to mind.
That's a tricky one. Usually the datasheet will show the expected load for the tube. This gives you a good reference for the impedance of the output transformer. Some times just won't work well as an audio amplifier. The data sheets also give operating voltage specs for the power transformer
This question is probably dumb af, but: if you planned an amplifier in stereo/dual mono would you NEED 2 OT's? I assume that they don't make one transformer with two isolated outputs

Yes HiFi setups have two output transformers one for each channel left and right
