Spinach with Chickpeas and Rice
Ingredients:
1 cup of rice
2 cups of water or vegetable broth
2 tablespoons of olive oil
1 onion, finely chopped
3 garlic cloves, minced
1 teaspoon of ground cumin
1 teaspoon of ground coriander
1/2 teaspoon of ground turmeric
1/2 teaspoon of paprika
1 can (15 oz) of chickpeas, drained and rinsed
4 cups of fresh spinach, washed and chopped
Salt and black pepper to taste
Lemon wedges for serving (optional)
Prepare the Spinach and Chickpeas:
- Heat olive oil in a large skillet over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Stir in the ground cumin, ground coriander, ground turmeric, and paprika. Cook for another minute to toast the spices.
- Add the chickpeas to the skillet and cook for 3-4 minutes, stirring occasionally.
- Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes.
- Season with salt and black pepper to taste.
