- While the ancestral method is recognized as the oldest way to produce sparkling wines and is increasingly adopted by wineries to create various styles, scientific knowledge about this method remains limited.
Due to the questionable fame of Ancestrals for being problematic products, Arnau aims to demonstrate that these issues can be mitigated through proper oenological practices that wineries can follow.
Additionally, it was observed that this technique can enhance the palette of sparkling wines available in the market, enabling wineries to reach a wider range of consumers.

After studying Biotechnology and finishing his master in Fermented Beverages, he started his PhD in oenological technology in the Rovira i Virgili University (Tarragona, Catalunya-SP) where he defended his thesis this past June. He developed his PhD thesis on sparkling wines (traditional and ancestral method) and the effects that climate change is having on the sector.
