Traeger Ranger. Its pretty sweet!
Can you do it with No pork.
Yeah use beef tallow or un rendered beef fat
What's the ratio pounds of meat to pounds of fat you aim for?
20% fat if it is just fat, or around 50% pork butt if fat isn't available.
I grind my sea ducks down with scallions and garlic, mix in soy sauce and grill them like burgers, makes the worst tasting birds tolerable
