I just made this. One of the best recipes I've made in a couple years. The chili is seasoned perfectly, and the mix of flavors of the cheddar, cornbread, sour cream, and cilantro is out of this world good. Thanks, Chef!

Taking the opportunity to thank you for showing me how to use sour cream in chili and such. My husband didn't realize he would be a fan because he didn't grow up with it (ah, Canada!) He hasn’t tried chili or sour cream? Both are very popular and common in Canada. :) Though I can only eat homemade chili because all canned chili has beans and beans are Satan.
@@MsLilyPickles I'm confused here too, perhaps he's from a rural area in Canada? I've had plenty of chili and sour cream growing up in the greater Toronto area. You can find canned chili as well as sour cream in every single grocery store here. You can also find chili at fast food chains like Tim Hortons or Wendy's.
My version of this is in the oven right now. I added a bag of frozen corn. I made enough for 3 pans. I will freeze the other two and these will end up being "fast meals" for one of weeks ahead. I like making double and triple batches of stuff so I can make "fast meals" during a week night when I know I'm going to get home late. I simply take out the bag of chili and defrost it, pour it in my 9 x 13 pan and put the cornbread on top. Wam bam! Dinner done in just over 30 minutes.
Made this with some ground chicken I had lying around because I don't know why I bought ground chicken. Sauteed the onions in some bacon fat and olive oil to make up for it. Turned out amazing. The cornbread and cheddar mixture turned out perfect. One of the most delicious things I've had in a while. Thank you Chef John!

This was DELICIOUS! My boyfriend loved it. I followed the recipe exactly and had no problem fitting it all in a 13x9 casserole dish. The only future change would be adding some diced jalapeno to the cornbread mixture. Also fun to prepare..
At peril of being pilloried I discovered a secret ingredient for my taco filling and Chili. A tiny dash of Curry Powder. You can't taste it out but it adds another layer of flavor.
I've made this dish on my own for almost 15 years and I thought your chilli was waaaay too wet. But the final product looked infinitely better than mine, omg... I will definitely be putting your methods to work! But I do prefer adding cheese, cilantro, and jalapeno directly to the cornbread batter. I think I'll keep that

This was delicious. Everyone liked it. It was simple and inexpensive. You will be the talk of the pot luck with this recipe. Just to reiterate, this is delicious. With this recipe, creamy pork stew, and a few others you will always beat your friends and family at cooking and at life just because.

I make a cornbread casserole similar to this, but I make the chili a bit thicker and use a cast iron dutch oven. I preheat it in the oven, and layer cornbread, cheese, chili, cheese, and top with cornbread. I even use the same "sky blue" brand. I'm going to have to try this in a casserole dish as shown and see which I prefer.

Adding water to the mince before cooking will make it easier to break it up into really small bits.

A couple pinches of unsweetened cocoa powder intensifies the color and adds richness and depth to chili. Beans make it more filling and provide fiber.
My family hates when I make Shepards Pie and they always request chili so I can’t wait to make this and psych them out! What a great idea!

That looks so good. I love cornbread and chili. Never thought about baking the cornbread on top of it. Now I know I can knock out two things at once. Great recipe Chef!
