Because of the premise, each time we hear something before skinner says “steamed hams” the pitch will have increased since we last hear it, creating a rising effect to “steamed hams”. The opposite is true afterwards where the pitch lowers when we hear a line repeated. I like that these facts outline “steamed hams” as a climactic moment to be built up to and afterwards calmed down from.

Actually it's because as before everything syncs up, the quicker videos (which are higher pitched as well) come closer together in ascending order to the Matching point in since from beginning to middle each come together quicker and exponentially, and afterward all the lower tones start descending and exponentially spread out more and more . The pitch seems to speed up and slow down at the synchronization point because the slower occurrences happen before the faster ones, and then reverse after the steamed hams. It's a similar effect to two Shepard tones, one going up and the latter going down.
