I like the idea about making a platform with aluminum foil. I always hate wrapping my springform pan‘s in the foil. I make 4” cheesecakes and it’s just a pain wrapping. Some cakes still get a little bit of water between the foil and the sides of the springform. So I’m gonna try your trick.... thanks for sharing!!!

Imo, it won't because there's still 4 blocks of cream cheese. I just made a different cheesecake with no sour cream, 3 blocks and 4 eggs (whisked egg whites).

Yes, leave it in the oven! Otherwise it’ll crack as soon as you pull it out. I’ve taken the cool down into the oven into account for the recipe
