Will you recommend that I use Revit 2024, or will it be "no problem" to use Revit 2025?

Why is my template file choices only shows two choices; Imperial Multi-discipline and Metric-multi discipline

It depends on what is loaded to Revit. You can actually add and load additional templates. If you type this on UA-cam you will be able to find a solution. Let me know if you solved it.
