Way to go Tim! Great job for a first time using the box and great tip about using the caja china in colder weather. I used it here in TX and if the weather is below 50 degrees you definitely need to ramp up the heat with more charcoal or the pig will not reach that temp as required. Thanks for the video.
Yea it's pretty obscure. It comes from the old Chinatown we had in Havana, Cuba. All the Chinese cubans left when Castro took over the country, but their style of bbq remained
