Omg im so excited to see u bread the chicken with potato flakes! My mom has made this since i was a kid. She did the traditional breading way with flour (we use corn starch now because were gluten free) egg then potato flakes. Ive tried recommending this to many people but i think theyre scared. It sounds funky, but its so good! my mom would sautee them in some olive oil and it was so good. The breading ends up tasting like potatoe chips. Ive never seen anyone else do this before

For my chicken enchilada casserole, I add a can of refried beans also to bulk it up. Also I use the small cans of chopped olives. I don't care for olives too much, but if mixed in just right, add a little something to the taste.
I love your ideas but I'm wondering how safe it is to spray the cooking spray directly onto your chicken. It has a propellant in it such as Butane and Propane. I don't see myself spraying it directly onto my food. To be honest, I rarely use it anyway, but that step in your recipe threw me off guard.
@@supereasyrecipe when you did the first layer, one of the 2nd pan. Enchilada sauce, didn't get any. Oops. But i saw plenty go on top of both. All good. Sorry

Cooking spray is meant to be sprayed on things 😂😂 hence the name…trust me you’ll survive!
It dissipates the moment you spray it. It's not a big deal at all.
