What's really great about this show is when you watch the whole thing and rewatch the earlier episodes, you notice more easter eggs/foreshadowing in the backgrounds that you didn't notice on your first watch. I'll give you one that is not a spoiler: The design on the windows in the Mystery Shack.
So when Mabel asks Shakespeare if he knows any limericks, he was supposed to start to say the “There Once Was a Man from Nantucket” one, but Disney shut that down. That’s why he says Kentucky, and Mabel throws the head away
My favourite joke that usually flies under the radar is when wax Coolio says what sounds like " 'Sup homes", but it's actually "Holmes", because he's talking to Sherlock. The show did a really great job distracting viewers from the natural suspicion that the wax figures would come alive (it _is_ Gravity Falls, after all) by concentrating on the twins' search for the culprit among the human guests. They even foreshadowed it during the grand re-opening, when Old Man McGucket asks whether the wax figures are alive and whether he can survive the "Wax men uprising". Mabel answers "Yes," which is 100% true: they _are_ alive, and McGucket _did_ survive.
sweat that Grunkle Stan didn’t believe them about the wax statues but still wasn’t mad that they wrecked his parlour or destroyed something that could make him a lot of money
There's also a code in the introduction if you can find it (not sure if its in all the intros or just 1 episodes). When you finish season 1 theres 3 series of shorts that take place between seasons. Dippers shorts has 6 pieces of 1 code that is extremely cool, and Mabels shorts gives you clues to whats gonna be explored in Season 2. Be careful buying merch (%100 do it but carefully) alot of fan faves that make it on shirts and hats arent introduced until later in the season so you may see some characters you havent met yet.

Something kinda funny, those last couple lines from Larry King's head, were apparently written in because the creator Alex Hirsch wanted to see the weirdest things he could make Larry King say, I mean if you have Larry King in your show's cast why wouldnt you have some fun with it?
