I just say that because a lot of the time I use mushrooms in the place of meat (more-so for the texture that I would have lost in making, say, yakisoba with 1/4 of the meat or no meat at all).

i have now made this inari sushi recipe twice now XD very delicious. but i don't use dashi stock, i use dark colored vegetable stock i made myself. because i don't want animal die for my meal.

Bamboo shoot, gobo or lotus root can be used instead of the hijiki seaweed :) You can also skip it if you make a small amount.

Mirin is a kind of rice wine similar to sake but it has much higher sugar content. It is an essential condiment for Japanese cooking :)
