      Wooohooo!!! I just chopped up the scoby this morning and started to marinate it in different juices and spices, so hopefully it will work out!

    You use honey instead of sugar? They can feed off honey instead of sugar?

      The jun scoby lives off of raw honey and green tea

    I saw someone cut up the scoby after washing it and putting it in a jar of honey. He also drizzled honey and ate it. I am going to do that with one of my scobies just to try it. No sense throwing it out if it is good for you.

    mine often sits for 2 months, I do not drink that much until summer comes around; yup it is pretty tart but easily mixed with new sweet tea, even sweet mint tea works well and tastes rather good! I fill smaller reused Kombucha bottles 1/3 new tea and 2/3 tart KB. One of these days I will try to convert some into jun! Thanks for the feed it to the chickens tip! I have an old scoby hotel that needs to be going going gone LOL I will take it when I go for eggs again.

      You are much braver than I am with the super tart kombucha and jun! I filmed this video and started this new batch last week on Thursday and I tasted it out of curiosity this morning - crazy tart already! Think I will start brewing again soon, but I'll remove the super tart stuff and let it properly turn to vinegar (and then use that for all my other projects!). Hopefully your chickens will enjoy the scoby!!!

    Honey has antibacterial properties from what I heard , is it not a good idea to avoid adding it to kombucha.

    Quick question: can you brew a mixture between kombucha and jun? I have been doing half black tea + half green tea and half honey + half sugar and it seems to be going fine, I just want to check if I am brewing a monster and don't know.

      Oooooh that's a very interesting idea! When I make kombucha, I always do half black and half green tea, but I've never tried doing half sugar half honey. What kind of scoby did you originally start with? (I've heard that the scoby for jun is different from the kombucha scoby, but I really have no idea if that's true or if it is just a ploy to sell two different types of cultures.)

      @@crazykenz4203 I got a scoby for jun yesterday and it is much thinner and smaller than the Kombucha scoby. I am watching it brew and it looks much different than Kombucha. Stuff is settling on the bottom which is said to be fine and the pellicle has fallen below the liquid where as Kombucha floats to the top.

    If you leave that for 3 months will you drink it after the 3 months ?

      Probably not drink because it will practically burn your mouth but you could use it as a vinegar or as some really strong starter!

      @@charlotteanderson7761 how long after it’s ready should you drink it and you leave it out still once you take the Scoby out or refrigerate?

      @@pamelamerfeld7997 if you have bottled up and put it in the refrigerator then you can drink it. If you want to ferment it more then just take it out of the fridge and let it ferment more. Kombucha if fermented properly should last basically forever however it will just keep getting more and more sour till the ph is so low it is not safe to drink anymore. You can also just drink it straight from your kombucha container if you don’t want to add flavor and carbonation.

      Thanks Charlotte for all the responses! I wouldn't drink the jun after three months - it would be waaaaay too tart for me. I just feed it this way if I'm not going to be actively brewing, but still want to keep the scoby healthy for whenever I do decide to brew next. I will eventually take off most of the excess liquid, put it in a different container, then let that turn to vinegar (and restart a fresh batch for consumption purposes once I'm actually ready to brew again). Jun vinegar is great for making shrubs and also, it makes an excellent trap for fruit flies (put about 1/2 cup into a jar and add a drop of dish soap, works great and I find it works better than apple cider vinegar, actually).

      Good idea! Of course after I moved and tried to get my brew going again, it decided to not work and I got mold. Grrrr. So I had to order a new jun scoby and now I'm trying to get things going (something is weird here, though - it just doesn't seem to want to do it's thing!).

      @@crazykenz4203 I wouldn't do it. Seen so many bad reviews. One person ordered a scoby from Etsy and got something called vinegar eels. The name alone creeps me out. A channel on YT showed what they are. Mercy.

    I'd really l8ke to know if you can get a fermentation with that dehydrated scoby..
    Technically you should be able to IF it really does have live culture in it. Please try it.. my curiosity is torturing me 🫣

      That is not dehydrated and other people said yes you can use a dehydrated scoby but it takes months to wake it up so I would not do it.
