I mostly use them for beginning a step skive or removing leather from the flesh side which makes folding much easier. It's not so essential for beginners, but it's a useful tool to have.

Why not directly load the paste to the thread and avoid the first step?
Because the thread polishes the inside, whereas the compound in the groove polishes the outside. Think of it like sharpening both sides of a blade.
