- Mini pancakes filled with Nutella! These are called Ebelskivers and are originally from Denmark. Perfect for brunch and totally versatile - add whatever filling that you like from chocolate or jam to cheese!
Ingredients
1 cup all-purpose flour
1 ½ tsp sugar
½ tsp baking powder
¼ tsp salt
2 eggs, yolks and whites separated
1 cup milk
2 tbsp unsalted butter, melted and room temperature
cooking spray

Hello! Danish subscriber dropping by! ^^ Æbleskiver (as they're called in Danish) are much considered as a Christmas treat, as they're eaten in December for Christmas with jam, powdered sugar and/or regular sugar ^^

@@jennyjohnson5428 Æbleskiver can be bought in stores in the frozen section at this time of the year, but I don't know if any vendors sell them until December. I don't live in Copenhagen, so I'm not quite sure ^^
Byt they're fairly easy to make yourself if you got the æbleskive pans ^^ I make some every year.
I appreciate that æbleskivers (pronounced eh-blah-ski-vuh or able-ski-ver) aren’t a completely lost art. I come from a very Norwegian family and I was brought up on these (yes, the other Scandinavian countries make them too). I like your Nutella addition. However, your method of turning them is incorrect and I’m guessing people will have trouble creating full spheres that way. Try using a skewer to turn them partially and once that has set, turn it again to complete the sphere. You’ll end up with more round æbleskivers that way. And in my family, we always put out multiple fillings to put in the hollow center after we cooked them. So feel free to cook them empty and fill them after with butter, jam, Nutella, etcetera. Also, I’ve seen people asking where to buy æbleskiver pans and you can find takoyaki pans at your local Asian market which are basically the same thing.

This looks similar to the Japanese pan (Takoyaki). I bet your pan could be used for versatile things like the Japanese one. Those look amazing by the way! I wonder if it would work with the syrup inside the ball. Mmmm. ☺️

I'm technically American but have some Danish ancestry and my grandmother taught me how to make Ebilskeavers (that's how she spells it so that's how I spell it; probably incorrect to actual Danish people but...) and the way we pronounce it is with a long a like able instead of a short e like egg the way you did.
I saw in a comment here that they're usually a Christmastime treat but we make ours any time of year. Mostly on special occassions when we can get the whole family of my dad's side (the Danish side) together since we all live in different states. No matter the time of year.
The way I learned to cook them is easier yet harder. We don't separate the ingredients like that; EVERYTHING goes in the mixing bowl then mixed until combined then left to sit til it bubbles. (This is where I prep my pan.)
The HARDER part is cooking them. We don't fill them so we fill the segments in the pan (starting center then working around the outer ring) full and when the bottom is solid but hasn't cooked through into a half ball
, we flip it with a flick of the wrist (which means we use a utensil with a pointed end to grasp and turn instead of your sticks) so we end up with a hollow ball.
To eat, we usually just split them in half and top/fill with whatever we like. I love mine with my grandmother's strawberry jam. My uncle will only eat them with peanut butter and jelly. Mostly, my family uses syrup like pancakes. But I'll have to try Nutella now. :)

if I used a mini muffin pan, would I need to turn them? or do you think they could be baked like muffins? I love this idea but will not invest in the specialty pan, thanks
Since nobody responded and this comment is at the top of the list, let me answer. You can do that in a muffin pan a well, as long as you can turn them in the pan - or it has a top you can put on that gives heat as well.
The Æbleskiver/Ebelskiver pans have round holes inside, so it's easy to turn them. If the holes in whatever type of pan you have is not round, it might get difficult to turn.... should be possible though.

In Belgium its poffertjes)))the best eay to put nutella inside,its made before drops and freeze,then just put this drops inside and cover with second layer

The reason why they are called æbleskiver is that when they were first made a thin slice of apple (æbleskive) was added. Also to get a rounder/fuller æbleskive you can do a quarter turn and add a bit more dough not a half turn as shown in the video.
They're called munker (monks) in norwegian. And there are munk-irons, just as waffle irons. This makes the making so much easier, because you won't have to flip them.

Do the pancake batter can be reserve in fridge??
The butter needs to stay melted and it will harden in the fridge, so I recommend making it fresh when you want to cook them :)
