VirtualLife It's the same reason why it's better to drink milk instead of water if your food is too spicy right? But then how does water dilute flavor then? For instance I've made sauces in the past and when trying to reduce my sauce out of fear of it drying up (because it does in my case) I would add more water and it always messed up the intensity of flavor of the sauce. I don't completely understand this concept then 🤔

Just something you grow up liking. Like, a food my family literally called "stinky food" to where I still don't know the actual name. We love it so much, but anybody who didn't grow up with those types of flavors would hate it.
It might also be because there's usually a lot of fish sauce in it. My friend use to say the same thing that kimchi smells like garbage. I personally love kimchi, but can understand that it is an acquired taste.
