Don't use it on anything else, but I also haven't used syrup on french toast ever since I began the tradition. I microwave the butter and mix brown sugar into it until it becomes a spread. I guess some honey or syrup could be added at this stage, but it's not necessary. It might help the paste stay spreadable though since it might harden depending on your ratio of sugar to butter. And no, while you can mix cinnomen into the egg to save some time, never mix the sugar into the egg- it will burn! I guess you could throw the sugar on a plate and coat each french toast as they finish cooking (but it probably won't caremalize).
