    Yummy! East meats West! I've tried this with pork belly and bacon just as good! Cilantro and jalapeno pepper at the end gives it a fresh flavor!

    Nice recipe Helen. I often use tomato paste instead of ketchup as it is not sour and makes the soup red and thicker.

      you use tomato paste, not regular tomatoes. It's more concentrate and easier to measure.

    Dear Helen,
    There is a photo of a dish pictured after the video that I would like to make. It is called Glass Noodle Stir Fry with Peppers, Napa Cabbage, Shitaki and Peanut Sauce (Goi Mien Chay) I can't find the recipe for it. Is that a recipe that is included somewhere?

      +rosie sun yes you can use chuck. Depending on how tender you want it to be, adjust the time

    Hi Helen,
    I have a non stick pot. Can i use this pot to cook Beef Ragu? Because the tbeef have to cook 3 -4 hrs and some people sugest me that the non stick pot is no good for cooking hi heat for 3-4 hrs. Is that true??? Please advices if you know??

    What is beef shank called in Vietnamese? I frequently come across recipes that call for this beef cut but I'm not sure what to tell my butcher haha.

    Hi, chị rất thích những video của em. Chị cũng share cho mấy người bạn người Anh của chị vì họ cũng mê món Việt từ hồi qua Việt Nam chơi đó ;-P Mà em ơi, nếu được thì em có thể nói hết bằng tiếng Anh (đừng xen tiếng Việt vào nếu không cần thiết) vì bạn chị nói hơi bị confused khi xem clips. Chị nghĩ thay vì lâu lâu để vài câu tiếng việt ở dưới như vậy thì em có thể cài 2 phụ đề tiếng việt và tiếng anh trên youtube để người dùng tự bật theo nhu cầu của họ. Mấy bạn người Anh của chị họ chưa quen Vietnamese accent nên thường nhờ chị "dịch lại". Có phụ đề tiếng Anh cho họ sẽ đỡ hơn đó em. Anyway, I love your cooking :-)

    CELERY!! you forgot it. It is part of the holy trinity of French food, Carrots, Onions and Celery is always the base! Elma Fudd even cooks Bugs bunny in it.
    Otherwise i like your recipes etc..

      Aaron James Please note that this is Vietnamese-style Ragout, not French one :) We neither caramelize onion, nor add celery. The French did inspire us, but we make it our way, hehe

    The onions should have been added first before the garlic. Onions need to be carmelized.

      In Vietnamese cooking I very seldom see cooks caramelize onions actually. That makes the vietnamese beef ragout different :P

    I made this recipe & found the ketchup to be too sweet for my palette. It smelled like ketchup, even after simmering. It did not evoke memories of my Vietnamese childhood. I felt perhaps it was quite the epic fail for me. Perhaps next time I will try it with a non ketchup tomato sauce & see if I can cook like my mom. Or I'll just have to go out to eat. Alas.

      I did not try the recipe, the Ketchup would have turned me off instantly. Something i have noticed with in all Asian cultures is the can not disseminate between Tomato "sauce" and Tomato "sauce" if that makes sense? There is Tomato sauce for pies and sausage rolls, but for Stews, spaghetti etc.. we use Tomato Puree (sometimes known as tomato sauce, hence confusion)
      I had spaghetti a Philippine woman made, and she used "tomato sauce" and it was horrendous, mind you she made great dishes otherwise, some really great noodle ones.
      I have a feeling this is where the problem of this dish comes from. I could not think of anything worse to put into a stew, ragout, goulash etc..

      Ragout IS a stew, although there are many variations. She never claimed this is a traditional French ragout either, as this is a Vietnamese cooking channel. Vietnamese adopted and modified many French dishes during the colonial period, and this is one that is eaten commonly in the Vietnamese home, and which we all call ragout (although most people use tomato sauce and not ketchup).
      You might be thinking of Italian ragu sauce which is eaten with pasta and is totally different.

      Eddy doesn't know where we get banh mi and the alphabet from. Vietnam has a lot of French influences if you knew your history.
