This is a fantastic recipe, very similar to what I watched my grandfather make in the '60s here in rural Alabama. No detailed recipe, just the right ingredients added together from handed down memory. His included pork. After cooking a whole hog and some chickens all night long over an oak/hickory fired open brick pit in the backyard, the Brunswick (aka Camp) stew would be made the next day in a cast iron kettle suspended over a coal bed of oak. It was my job to keep the stew stirred up with an old wood boat paddle. Between three families on the dairy farm, we ate BBQ and camp stew for weeks.

My family owned a bbq restaurant for several years until my dad got too old to run it. We made it almost the same way. He won awards in Brunswick, Ga. at a stew cookoff. He and his friends started making it for community events in the late 70’s through the 80’s. They called themselves the Valley Stewmasters. It stayed in operation from 1990 until 2013. Lots of catering back then. I only know how to make about 20 gallons at a time. I think I’ll do that soon.
We talk all the time about how diverse Brunswick Stew is made. They are all unique, yet so amazing in their own way. We have several relatives who have competed in several contests and placed very well over the years. Thank you so much for this recipe. It is delicious! Because I live in the North Central part of NC, we add stew beef meat along with the chicken. I could not find bone-in chicken breast with the skin on, so I used a whole chicken, and omitted the sugar. It's perfect! Thank you!

From Virginia too and I enjoyed this recipe and you! but I have to ask - where is the chopped smoked pork bbq, the beef brisket, and the smoked pork chops? and the BBQ (homemade sauce). That is pretty traditional for Brunswick stew anywhere unless you have a spare squirrel around which was in the original recipe.
Mom Newcomb is from Brunswick County, Virginia and this is the recipe she grew up with. Her recipe doesn't call for any other meats but we have seen other people's recipes that include beef and even one that calls for a squirrel but we really just love it the way she makes it. It is delicious!
I just watched this because of the NY Times article. Great video and I'd love to have your mom cook for me too. It never occurred to me to put sugar into a stew. Will have to try to figure out how to make this for four servings because we are retired and I only cook for two of us. Thanks for sharing.

Ohhh, eastern NC checking in here - it's *better* the next day (or a month later!). But my secret ingredient instead of sugar? Mashed sweet potato boiled with the chicken. Just a little adds sweetness, body, color, vitamin C, fiber. We use butter beans vs Limas, but same otherwise! Maybe fewer carrots, bc of bit of sweet potato.

I was a little surprised, I expected to see pork butt? I am from the north east and the first time I’ve ever had it, was from a friend that her parents are from The south,Not sure what part at the moment. Love the idea of, the potatoes. Who knew. The version I had, had chicken, pork butt, corn, which is a sauce. But, like you said, you can tailor it to your own. Going to make this today❤️

Thank you for the Brunswick Stew recipe.It’s on my stovetop simmering. Taste tested and it’s very good.The only adjustment I made was I used Yukon Gold potatoes (I don’t care for russet) and 1/4 cup of organic pure cane sugar. This will become a regular winter meal (made enough to freeze).

One of our subscribers prefers Yukon Gold potatoes and we've had some comments about red potatoes. Sandy you probably could use kidney beans but I think it would change the stew slightly. You could use lima beans instead of butter bean if you can't find them but I would use baby lima beans. Let us know if make it. We would love to hear how you love it!
So glad you plan to make the Brunswick Stew recipe. Mom uses fresh butter beans that don't require any pre-preparation. In a pinch, when fresh are not available, I have used frozen which also do not require any pre-preparation. I am thinking you might have gotten dried lima beans, I assume they will work but have never tried it before. I have used lima beans instead of butter beans when I couldn't find butter beans and it works, they are just not as tender. I hope you give the recipe a try, I believe you will love it! Thanks for your video. I’m making it now. I went to college at SPC in Brunswick County, VA! The bowl the chicken was in was like one of my grandma’s Tupperware bowls! I never would have thought to add butter. For me, that was the secret ingredient. 😊

Oh my God, I saw enjoy this video. The cutest mother and what a great help dad was in the kitchen! I just love the authentic family first. And Mama , knows her stuff. I was a little surprised, I expected to see pork butt? I am from the north east and the first time I’ve ever had it, was from a friend that her parents are from The south,Not sure what part at the moment. Love the idea of, the potatoes. Who knew. The version I had, had chicken, pork butt, corn, which is a sauce. But, like you said, you can tailor it to your own. Going to make this today❤️

This was really good. Just one question are butter beans and lima beans the same thing? Can't wait to give it a go! You were great to watch and you assistant was very good as well. Looking forward to another great recipe. I had never heard of this one but I am so glad I have it now.

Thank you for the Brunswick Stew recipe.It’s on my stovetop simmering. Taste tested and it’s very good.The only adjustment I made was I used Yukon Gold potatoes (I don’t care for russet) and 1/4 cup of organic pure cane sugar. This will become a regular winter meal (made enough to freeze).

Dumb question but where those Lima beans frozen or dried?
We prefer to use fresh lima beans, but the lima beans we used were frozen and allowed to fully thaw. You can use dried lima beans, but make sure you soak them overnight before you use them. Thank you so much for watching our video.

I’m confused. There are 2 potatoes shown on the counter, but when your husband is shown cutting the carrots, I can see 6 skinned potatoes on the counter nearby. How many potatoes do you use? Thank you! I can’t wait to try it!

Hello Joan - For this recipe we used 8-10 medium russet potatoes chopped into bite-size pieces (4 cups). You can use any potatoes you like. One of our subscribers prefers Yukon Gold potatoes and we've had some comments about red potatoes. I’m from Georgia and I make mine similar but I use English peas instead of Lima beans and I don’t use carrots.

We’re the Lima beans dried?
They were not dried. They were frozen and you can put them in with the hot stew and it will that them out almost immediately. Thanks for watching and stay tuned for more videos.
could you use kidney beans?
Sandy you probably could use kidney beans but I think it would change the stew slightly. You could use lima beans instead of butter bean if you can't find them but I would use baby lima beans. Let us know if make it. We would love to hear how you love it!

So glad you plan to make the Brunswick Stew recipe. Mom uses fresh butter beans that don't require any pre-preparation. In a pinch, when fresh are not available, I have used frozen which also do not require any pre-preparation. I am thinking you might have gotten dried lima beans, I assume they will work but have never tried it before. I have used lima beans instead of butter beans when I couldn't find butter beans and it works, they are just not as tender. I hope you give the recipe a try, I believe you will love it! Hello Susan...This is Dawn...I eat low carb so I have substituted Stevie or Splenda for the sugar and it is still really good. You can also substitute turnips for the potatoes to lower the carbs. Thanks for watching and supporting our channel!
