Note: your tap water might contain chloramine and not just chlorine(chloramine is becoming more common these days), in which case the "leaving it out for 24 hours" won't work and you will need to run it through a charcoal filter
You can reduce / remove chloramine with a Campden tablet.
@Yoswin Freeman Yes - I know that a Campden tablet is a bacteria 'killing agent'. I brew beer, I know all of that, but I've also done a lot of reading on this and I've learned that there is a chemical reaction between Campden and Chloramine that cancels both out. It is the only way to fully remove the Cloramine. Perhaps you should read some science of brewing papers? Further to that There is very little if any Lactobacillus in 'Ginger Bug' it is mainly Saccharomyces yeast.
Would it be possible to boil the water before using it?
@@mmbw123 A simple brita filter will reduce chlorine to a level where your bacteria can grow.
You can always check on your city's website or call them to know. I actually just looked on my city's water report today (coincidentally haha) and they actually specified that we have only chlorine and no chloramine

Made this as a water kefir recipe and it worked out pretty good! Second ferment was less that 20 hours and it had so much carbonation it exploded and erupted all over the place at room temperature when I burped it the second time. After refrigeration it was very bubbly and delicious, no mess. Very unique cola flavor for sure.. Pretty stoked on a few of your recipes, thanks!

Haha. there is a learning curve when it comes to carbonation. We've all done it.
If we install a fermentation lock, we have a very nice ginger beer. an average of 6.2 alcohol (my English is a little bad. Im learning sorry)
Great recipe. If you guys are serious about making a lot of cola I would definitely consider adding phosphoric acid. It gives cola the really dry acidity that creates the refreshing aftertaste!

technically you could use the liquid from any lacto-ferment. It would contain the needed probiotics to kick off a new ferment. You dont need much, just a few tablespoons.

Hi there yes you can but because the milk has been removed from ghee it may not be quite as tasty...but it still works :)
Hi! If you put it in a plastic bottle do you still need to burp it? By the way, I already made my first cherry soda but filled it till the top. Stubborn me, should have followed your advice.When I opened it I had a fountain gushing out. I still enjoyed half of what's left in the bottle though. hahahaha. but the mess it made, not at all. If I want to increase the quantity of ginger bug, can I give it a bigger feed like 1 cup of sugar 2 cup of water and 2 cup of ginger at a time? Thanks.

Release it from time to time, particularly when you start to see those little bubbles starting to form on the surface. 😀

How to make the shelf life of this cole much longer?
The shelf life is actually good for a couple of weeks in the fridge. The older it gets, the less sweet it becomes. Typically these sodas are not meant to be around for long, so small batches are recommended. I hope this helps :)

This tastes more like cola; the ginger is very subtle yet very important. I hope you give it a try :)

Good question! It doesn’t go bad, it just becomes less sweet. I have still enjoyed it 2 weeks later. The first 3-5 days are the sweetest.

Not sure, only way I can guess is by taste.

My drinks don't turn out fizzy enough. What am I doing wrong???
It could be a number of things, but I find my sodas are most bubbly when it ferments in a very warm spot. You could also try increasing the sugar a bit, or maybe your bottles are not clean enough? Also if your ginger bug is new, it can take a few feedings to get very active. I hope these possible solutions help :)

Now I started the Orange Soda. The first batch was too yeasty, I think I added too much ginger bug. Now I made another batch and it tastes simply horrible! It tastes like very bad medicine. So i decided to see if i could salvage it. I saw that i didn't add enough bug and sugar, so I added more of that. After 24hrs it tastes so much better however, it is not sweet at all and it has a very weak orange taste. Can it be saved? Please kindly help!!

I'm new to this so forgive my ignorance but you said leave them out for 1 to 5 days, but you said drink them within 3 days. Did you mean AFTER they have been opened for the first time? I really want to try doing this but I don't want to make my self sick.
Yes, this is after they have fermented for 1-5 days (it could take longer to ferment depending on temperature, strength of bug etc.)...and it is still good to drink after 3-5 days, it will just taste its best in that time. I hope this helps! :)

So disappointed. Apparently Coriander seed isn’t so easy to find in my area. I went to 3 different grocery stores. I read online that fennel seed could be substituted. I’ll have to try that, because coriander seeds are rare.
Try to find it in a indian story, if there is one in your locality.
Remove the skin from the ginger root if it's not organic. It may contain pesticide or other chemicals! You can keep the skin on if the ginger is organic.

It only becomes alcohol if it sits for a very, very long time and the ginger bug eats all the sugar. When that happens it is not drinkable...it tastes really gross :)
ah ok ty for the info c: I gave my brother some of the soda that i made yesterday and he told be that it could be alcoholic that's why I was curious.
The actual answer is: The wild yeast from the ginger bug does produce alcohol as soon as it starts consuming any sugar. However using this ginger bug will produce less than a half a percent of alcohol (0.5%, and likely much less) in any appreciable time making it legally "non-alcoholic" and too little to be able to taste. Over time it will eat more of the sugar and produce more alcohol, but never enough to feel it(just tasted an old ginger ale of mine using my ginger bug, only the bitter lemon taste was left) and like I Cook And Paint mentioned "it tastes really gross". Overall don't expect this method to produce any appreciable amount of alcohol (doubt you'd ever be able to taste it).
