This video is a strawberry rose cake.
In fact, I ended up making the video twice. Isn't it slightly different from the thumbnail I posted on the community board yesterday?
In fact, when I tried to edit it, I found that some important parts had stopped recording.
So I went through a disaster that had to be remake in a hurry.
But I'm glad I finished almost the same.
Anyway, thank you so much for voting for the thumbnail on the community board.
So, I took another picture and uploaded it in the same style as the thumbnail that received the most votes.
This cake uses two types of whipped cream.
The cream decorated with roses is a strong and elastic cream made by mixing mascarpone and white chocolate and adding gelatin.
This cream is perfect for rose piping.
Since the cream is a bit heavy, I used almond Genoise sheet to support the cream.
It is also moist and the texture is very good. Please try making it.

100 g raspberries
180g sugar
12g lemon juice
♥︎ Strawberry White Chocolate Mascarpone Cream
4.5g gelatin
75g Strawberry Jam + 30g Water
80g white chocolate
80g heavy cream A
110g mascarpone cheese
4g vanilla extract
150g heavy Cream B
a bit of pink food coloring
♥︎ Almond Genoise (⌀ 15cm)
65g cake flour
20g almond flour
156g eggs
85g sugar
28g butter
28g milk
4g vanilla extract
♥︎ simple syrup
80g water
35g sugar
6g Kirsch
♥︎ Mascarpone whipped Cream
180g heavy cream
20g mascarpone cheese
20g sugar
♥︎ Others
Wilton 2D tip. (Or 1M tip will be good)

There is genuinely nothing in this world I love more than strawberry cakes and this is definitely one of the best I have seen. Even though I told myself I've finished baking this week (I still have cookies left to eat), I need to make 100 right now!!!
It is Valentine’s Day and I happened to watch this. It couldn’t be more fitting. I am far away from home but was looking for inspiration for my son’s birthday cake. While his birthday is in April I think this would be so fitting because it seems to have such a Spring vibe to it. Beautiful as always. And the combination of strawberries, mascarpone, and whipped cream paired with genoise is simply heavenly. Thank you for sharing your creations. They are so beautifully inspired while being delicious indulgences of love for those fortunate to receive them.
