The taste is different between the two. I do not wish to sound condescending, but in India the variety of vegetables based cuisine is extensive. I'm 65 year old, just 6 states I have not visited. Rest I have had the opportunity to taste the local food. So for an non Indian to even get an small idea of vegetarian food is a challenge. Add to it that we have a flourishing non veg cuisine. From meat, poultry, fish, sea food. Discovering Indian cuisine requires a lot of time and patience. Each region of India has different dishes as snacks and main course.
I am from Darjeeling and from Khas community we are also believed to have a connection with uttarkhand people as we share same surename😅 some , culture, dress and many more but it seems like in case of food its totally different kodo ki roti was the only thing I have ever tried others I have never heard about too.
Sarson ka saag n makki ki roti is very common...leave punjab even here in Mumbai its very famous...its true Iman in India you will find many many types of varieties in food in each n every state. Rotis which they were having is Ragi rotis..even in Mumbai people it lots...Google Ragi, you will get all details...very healthy atta
that chutney is made of bhang seeds it dose not intoxicate you but the same time it will calm you down . and siddu's are my favorite whenever you guys come to India just try all the dishes .

roti made of ragi flour . Poppy seed per say does not have any effect it is used to give thickness to the gravy .

Nasha ke liye aapko Bud, ya leaves (leaves me THC concentration kam hota hai) consume karna pare ga.
