@@venicawood3894 - Hi Venica, the bulk of what is in the spice package is mustard seeds, a bit of crushed bay leaf (but not much - that is why I add extra) and a few red pepper flakes. That looks like all that was in my particular spice packet. If you are buying this from a butcher, you want to ask him for a 4 pound "corned" flat cut brisket. If he does not sell them "corned" you will have to "corn" it yourself which means to soak it in highly salted water with salt pieces the size of corn kernels. That is where the name comes from. It is a bit of an involved process and you may not be able to find that type of salt, so an option would be to soak it in a salty brine - 1-2 cups of kosher salt to a 1-2 gallons of water (depends on the size of your brisket). And soak it overnight. Rinse well, then cook. But it won't be exactly like commercially corned beef. Hope this helps. Love, Mary

My mother in Law (93) used to put the fully tender brisket under the broiler with a brown sugar glaze to sear the fat before slicing. o my goodness so yummy

Hi Mary. You asked a no tear cutting onions. That’s really gives you options. 1) breath through your mouth, 2) put the onion in the freezer for a few minutes like 15 minutes . I’ve used both methods with no tears!

Mary, I have an inexpensive pair of swimming goggles that I wear when I chop onions. They release an irritant into the air when cut and the goggles keep it out of your eyes. It works like a charm! I've also heard that if you chill the onions in the fridge before cutting them it helps, but I haven't tried it.
Hi, there are two ways to cut onions without tearing up that I find helps me. First one is rinse your onion before cutting. The second one is breathe through your mouth. Don't breath through your nose as the fumes will trigger the tearing. I sure hopes this helps.
Hi Mary! What a nice idea for something different for supper. Years ago, regarding onions, I read in the Anne Landers advice column (Canadian version of “Dear Abby”?) that if one can keep the mouth closed while cutting them up, they won’t make you cry. Of course this fails when you have to talk. Also when making large amounts of an onion relish recipe for canning, it is impossible to avoid severe exposure, unless wearing swimming goggles. I guess that is what food processors are for. Blessings!

Hi, Sweet Mary! Great vid, as always. I made corned beef and cabbage yesterday with a couple of point cuts I'd picked up for very little money. I never like the seasoning packets that come with it, so this time I made my own with coriander, cinnamon, ginger, garlic, white pepper, dry mustard, allspice, and bay leaves (all ground but the bay). I added a touch of tawny port as well. Because the points are usually so fatty, I cooked the meat, pulled it, strained as much fat off the top as possible (over a half pint), added the veg to the broth and cooked them, then threw the corned beef back in for the last few minutes to warm up. The flavor of the meat was wonderful, and no dealing with those annoying mustard seeds, lol! For onions, the most relief I've found is to breathe only through your mouth when cutting them up. That works well if you're only cutting up one, but anymore than one onion, and the fumes find their way in through your eyes I think.

I dont know how to make your eyes not water but from working in some restaurant kitchens i learned that when your eyes are watering bad to go into the walk in freezer, and the cold makes your eyes stop watering and they feel better, so at home ill be sticking my head in my freezer hahaha Also if you burn your hand cooking put mustard on it. stops the burn rite away!
Hi Mary, a chef told me the secret to no cry onion chopping is for at least one hour prior to chopping it up, you cut off the root side and place the cut side down on a paper towel and let the white liquid drain out. I've done this and it worked for me. I didn't take a lot of the onion, just about an inch above the roots. Hope that helps.

A very sharp knife helps. Slice through the onion cell walls rather than crush them. After initial cut, rinse onion pieces under cold water to remove sulfurous compounds that cause tears.

The best way to avoid onion tears is to install a kitchen ceiling fan above the work area. Use the downdraft mode setting so that the air pushes down from the ceiling. Since doing so, I haven't shed a tear in 20 years.
Hi, I don't know if this helps you but if you refrigerate the onions before you use them it removes the fragrance that tears eyes. This is why if you use a used onion out of the refrigerator it doesn't affect the eyes.
I recently found out that St. Patrick was actually from Jewish lineage (He was really a Messianic Jew, I think his mom was Irish ) and since corned beef was traditionally a Jewish dish, it makes sense we'd be eating this meal on his day-in any case, this Italian loves it anytime!

No way would that corned beef serve 6 in my family, my two grandsons maybe! Usually make 3 and a 4th for having leftovers for sandwiches next day. One of our favorite meals and I have no idea why I only make it on St. Patrick’s Day! Omg my mouth is watering and it’s only June! 🤣
So disappointing to spend so much time and money, only to be disappointed! We've probably all had at least one meal that just didn't work, and it's always a letdown! But we learn something and move on. Happy St. Pat '24.

I keep my onions in the fridge, when they're cold they don't exude so many fumes when you cut them so there's practically no tearing although sometimes it depends on the onion!

Not sure if this was mentioned. I find keeping my onions in the fridge help them not make my eyes tear. But I have heard that this isn't the best for your onions. However I've never seen a difference
Another video I was watching, he left the fat on, so I thought you were supposed to. My granddaughter wouldn't be able to get one mouthful down if it had that layer attached, so I'm so happy to see you say it's *supposed* to be removed at serving time! (Though I probably would have removed it anyway 😁)

I have very sensitive eyes when it comes to onions and I cry like a baby. I learned that cutting up the onions near the sink with the water running slightly helps tremendously. I heard that the juice looks for water and so the faucet is safer then my eyeballs.
I’m a wee bit late to the comment, however mam , what I found that works best for me is simply using a set of safety glasses/ goggles. Nothing fancy, I always have sets for working and shooting around the house. Love your videos and prayers to you and your family! Tinman

Hello Mary, to stop your eyes from watering while cutting onions (At least this works for me) I wear a snorkel mask. - Sure, it may look silly, but no tears. Also, just to make sure I cleaned the cutting board and knife and my hands before taking the mask off. -- Swimming goggles may work just as well, but I wasn't sure if the scent would be a problem for me, so my mask covers the nose.
The secret to cutting onions without tears: put them in the refrigerator the night before you plan to cut them. The coldness of the onion prevents the gases from reaching your eyes that cause tears. It works wonders!!!!
Question....today on our way home, we stopped at a grocery store that's going out of business and was just curious as to what they had marked down. In the produce section they had big bags of onion peels for sale ..have you ever seen a grocery store that sold onion peels? First time for me! I'm still wondering why...lol

I find it all very moist and usually serve as is, but here's a nice sauce - you mix it all and cook it for about 5 minutes till it thickens up a little: INGREDIENTS 2 eggs, beaten 1⁄4 cup brown sugar 3 tablespoons sugar 3 tablespoons mustard 1⁄2 cup vinegar 1 tablespoon margarine (I'd use butter)

My mom and grandmother used to cook corned beef for us,It got a little kid like me who hated cabbage to enjoy that as well. When I cook it though, the salt taste seems to concentrate into the carrots, but not other veg like the potatos.Am I putting them in too early, or is this common, and maybe even expected to absorb salt? thanks! :D

@@venicawood3894 - Hi Venica, the bulk of what is in the spice package is mustard seeds, a bit of crushed bay leaf (but not much - that is why I add extra) and a few red pepper flakes. That looks like all that was in my particular spice packet. If you are buying this from a butcher, you want to ask him for a 4 pound "corned" flat cut brisket. If he does not sell them "corned" you will have to "corn" it yourself which means to soak it in highly salted water with salt pieces the size of corn kernels. That is where the name comes from. It is a bit of an involved process and you may not be able to find that type of salt, so an option would be to soak it in a salty brine - 1-2 cups of kosher salt to a 1-2 gallons of water (depends on the size of your brisket). And soak it overnight. Rinse well, then cook. But it won't be exactly like commercially corned beef. Hope this helps. Love, Mary

Hi Mary. You asked a no tear cutting onions. That’s really gives you options. 1) breath through your mouth, 2) put the onion in the freezer for a few minutes like 15 minutes . I’ve used both methods with no tears!

FYI: As a Catholic you can eat meat on Friday if a Feast day falls on it and St. Patrick's Day is a feast day!

Mary, I have an inexpensive pair of swimming goggles that I wear when I chop onions. They release an irritant into the air when cut and the goggles keep it out of your eyes. It works like a charm! I've also heard that if you chill the onions in the fridge before cutting them it helps, but I haven't tried it.

Hi, there are two ways to cut onions without tearing up that I find helps me. First one is rinse your onion before cutting. The second one is breathe through your mouth. Don't breath through your nose as the fumes will trigger the tearing. I sure hopes this helps.
I also run my onions under cold water before cutting.
I heard to chew gum while cutting. Never tried it though. Mahalo Mary for this wonderful video!
You can pop them in the freezer.

Hi Mary! What a nice idea for something different for supper. Years ago, regarding onions, I read in the Anne Landers advice column (Canadian version of “Dear Abby”?) that if one can keep the mouth closed while cutting them up, they won’t make you cry. Of course this fails when you have to talk. Also when making large amounts of an onion relish recipe for canning, it is impossible to avoid severe exposure, unless wearing swimming goggles. I guess that is what food processors are for. Blessings!

Hi, Sweet Mary! Great vid, as always. I made corned beef and cabbage yesterday with a couple of point cuts I'd picked up for very little money. I never like the seasoning packets that come with it, so this time I made my own with coriander, cinnamon, ginger, garlic, white pepper, dry mustard, allspice, and bay leaves (all ground but the bay). I added a touch of tawny port as well. Because the points are usually so fatty, I cooked the meat, pulled it, strained as much fat off the top as possible (over a half pint), added the veg to the broth and cooked them, then threw the corned beef back in for the last few minutes to warm up. The flavor of the meat was wonderful, and no dealing with those annoying mustard seeds, lol! For onions, the most relief I've found is to breathe only through your mouth when cutting them up. That works well if you're only cutting up one, but anymore than one onion, and the fumes find their way in through your eyes I think.

I dont know how to make your eyes not water but from working in some restaurant kitchens i learned that when your eyes are watering bad to go into the walk in freezer, and the cold makes your eyes stop watering and they feel better, so at home ill be sticking my head in my freezer hahaha Also if you burn your hand cooking put mustard on it. stops the burn rite away!
Hi Mary, a chef told me the secret to no cry onion chopping is for at least one hour prior to chopping it up, you cut off the root side and place the cut side down on a paper towel and let the white liquid drain out. I've done this and it worked for me. I didn't take a lot of the onion, just about an inch above the roots. Hope that helps.

Hi Mary, thanks for everything. I just love watching, listening and learning. Here’s my tip or a corn beef dinner. After skimming, had a big can of dark stout beer. Personally, I cannot stand dark beer, but it adds tremendously to the flavour of this dish! Cheers!
A very sharp knife helps. Slice through the onion cell walls rather than crush them. After initial cut, rinse onion pieces under cold water to remove sulfurous compounds that cause tears.
I put the onions in the fridge first and get it nice and cold. Then I chop and it helps so much!

The best way to avoid onion tears is to install a kitchen ceiling fan above the work area. Use the downdraft mode setting so that the air pushes down from the ceiling. Since doing so, I haven't shed a tear in 20 years.
Hi, I don't know if this helps you but if you refrigerate the onions before you use them it removes the fragrance that tears eyes. This is why if you use a used onion out of the refrigerator it doesn't affect the eyes.

I recently found out that St. Patrick was actually from Jewish lineage (He was really a Messianic Jew, I think his mom was Irish ) and since corned beef was traditionally a Jewish dish, it makes sense we'd be eating this meal on his day-in any case, this Italian loves it anytime!

I keep my onions in the fridge, when they're cold they don't exude so many fumes when you cut them so there's practically no tearing although sometimes it depends on the onion!

I find keeping my onions in the fridge help them not make my eyes tear. But I have heard that this isn't the best for your onions. However I've never seen a difference
Another video I was watching, he left the fat on, so I thought you were supposed to. My granddaughter wouldn't be able to get one mouthful down if it had that layer attached, so I'm so happy to see you say it's *supposed* to be removed at serving time! (Though I probably would have removed it anyway 😁)

I have very sensitive eyes when it comes to onions and I cry like a baby. I learned that cutting up the onions near the sink with the water running slightly helps tremendously. I heard that the juice looks for water and so the faucet is safer then my eyeballs.

I’m a wee bit late to the comment, however mam , what I found that works best for me is simply using a set of safety glasses/ goggles. Nothing fancy, I always have sets for working and shooting around the house. Love your videos and prayers to you and your family! Tinman

Hello Mary, to stop your eyes from watering while cutting onions (At least this works for me) I wear a snorkel mask. - Sure, it may look silly, but no tears. Also, just to make sure I cleaned the cutting board and knife and my hands before taking the mask off. -- Swimming goggles may work just as well, but I wasn't sure if the scent would be a problem for me, so my mask covers the nose.

The secret to cutting onions without tears: put them in the refrigerator the night before you plan to cut them. The coldness of the onion prevents the gases from reaching your eyes that cause tears. It works wonders!!!!
Coat your knife with olive or avocado oil prior to cutting your onions

I find it all very moist and usually serve as is, but here's a nice sauce - you mix it all and cook it for about 5 minutes till it thickens up a little:
INGREDIENTS
2 eggs, beaten
1⁄4 cup brown sugar
3 tablespoons sugar
3 tablespoons mustard
1⁄2 cup vinegar
1 tablespoon margarine (I'd use butter)

The secret to eyes tearing up while cutting onions is swimming goggles. Learned this from my nephew while he was living with us and training to be a chef.
Hi Mary, firstly, I just love your 70’s style kitchen, I love the happy cheery colours. Secondly, this isn’t criticism but the end of your videos after you dish up your food, it always seems rushed....I’d love to see more close ups of the dish & you doing a taste test. My mom and grandmother used to cook corned beef for us,It got a little kid like me who hated cabbage to enjoy that as well. When I cook it though, the salt taste seems to concentrate into the carrots, but not other veg like the potatos.Am I putting them in too early, or is this common, and maybe even expected to absorb salt? thanks! :D

Some say running hot water in the sink, When pealing onions stops your eye watering. My eyes don’t water so I can’t say it totally works.
I think if you peel carrots they taste better.
I wear contact lenses and never cry cutting onions when I wear them so much so that I forget that’s even a thing that happens! But then I’ll wear my glasses and end up crying soooo much.
