These delicious lemon cookies are topped with a beautiful blueberry cream cheese frosting to make for the ultimate summer cookie 😍
Ingredients:
For Blueberry Sauce 🫐
- 1 cup blueberries
- 1/4 cup sugar
- 1 tbsp lemon juice
- 1 tbsp cornstarch
- 1 tbsp water
- 1/2 tsp blueberry extract (optional)
Lemon Cookies 🍋
- 1 cup butter, room temp
- 2/3 cup sugar
- 6 tbsp powdered sugar
- 2 tbsp lemon juice
- 1 tsp lemon extract
- 2 cups AP flour
- 2/3 cups self rising flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 2 tbsp cornstarch
For Blueberry Cream Cheese Frosting 🧁
- 226g cream cheese, softened
- 1/2 cup butter, softened
- 2 tbsp shortening
- 2 tbsp blueberry sauce
- 1/2 tsp blueberry extract
- 3 tsp meringue powder
- 4 cups powdered sugar
