Thank god for this channel. Nothing like the nonna's to teach us how to do pasta. Also what's great is that Pasta Grannies makes pasta's I've never heard from before. By the looks of it, Pitzudos would be the death of me. So delicious.
I come from an Italian family (Calabrese) but until I started watching this channel, I had no idea that Italians used potatoes in so many different ways! I'm from Pittsburgh, Pennsylvania so thanks to our Slavic neighbors, we all love potatoes. Grazie tanto e buona Pasqua!
hi Elisa, potatoes don't get a starring role in Italy, but they turn up in some delicious dishes - I love potato ravioli styles - tortelli and culurgiones! best wishes, Vicky
This was truly a Good Friday in many ways, this video especially. What a wonderful, wholesome and homey lesson on making pitzudos, the friendship of those two was an added treat. Great video!
What a regional recipe! That fresh cheese I am certain cannot be duplicated anywhere but there. Buona Pasqua to these wonderful ladies and your channel. Every week is another joy. Thanks!
hi Scott, you are right, 2 day old cheese will be difficult to find, but I think one could conjure a passable approximation with a mix of young pecorino and mozzarella for guaranteed stringing. best wishes, Vicky
@@pastagrannies No farming for me these days I'm afraid. Plus though tasty, sheep were my least favourite animals on the farm. We didn't get on. Goats on the other hand I love, I think of them as ungulates with Jack Russell terrier personalities. Thankfully these days as well as lamb I can source hoggets [sheep over a year old] & mutton, both have so much more flavour. A friend of mine who also likes to cook occasionally goes in on a whole carcass. We then split it & I taught myself to butcher large animals years ago when I was a forester. Keeps the freezer full & a much cheaper way to buy meat, plus I know where it came from as a local farmer sells it to us.
Those look magnificent, and I fully understand them not topping them with honey. Let the freshly made cheese speak for itself! Thank you for another lovely episode.
Wow thank you for sharing this I have never seen anything like it and I thought I've seen it all LOL those look absolutely gorgeous !! So wish I had a couple of those now to go with my fish dinner for Good Friday❤
Growing up in an Italian home as a first generation in the US, I can say that since I have lost both my parents, your videos give me a feeling of joy everytime I watch one. Thank you from the bottom of my heart for the videos you produce. I know this suggestion comes a little late as Easter was just a few days ago, but I had a brilliant idea. This year, I was a little depressed for Easter as the holidays always make me think of my parents. I had a craving for something my mother made every year at Easter time. If possible, could you do a video on Pitta Chiena. It is a Calabrian Easter dish that you may also know by the name Pizza Rustica. As a little bonus, and if you were able to pull this off I would tip my hat to you, maybe include Easter Breads and cookies. One I always enjoyed growing up was called Pitta Pi. It is a half moon shaped little pocket that has a filling made with cooked down grapes I believe. I have searched online for it, and Pitta Pi may be what it was called in Maierato. The closest thing I found was Pitta 'Mpigliata, but it looks nothing like what I remember. Anyways, those were my suggestions. May God bless you and I pray you continue to post the video of these Italian gems. My Nonna would love this.
Hello Giacinto, thank your for your appreciation - and your suggestions. Funnily enough you are the second person this week to ask for Pizza Rustica as a video, and it's now on my list. It will be for next Easter. I'll investigate the cookies too. with best wishes, Vicky
Buona Pasqua tutti Nonni di Pasta. Vicky what time will you be around to make us some of those delicious Sos Pitzudos! you had a good technique. Thank you everybody wonderful as usual. Ramon.
Pierina is rather terrifyingly strong, and this looks absoloutely delicious (aside from the lard, which is admittedly *guaranteed* to make things more delicious if one eats corpses in the first place). I like that she showed us her painting and explained it, too, it's good to see folk being creative and not feeling guilty about not feeding the results into the capitalist machine.
I love this video....I love ALL of the Pasta Grannies videos! I live in Maryland, USA so I can't get all of the exact cheeses but I have a good cheese shop and can get good substitutes. Besides, if I had the exact ingredients available the result would not be the same here. It's the terroir and the individual love that goes into the food. I'd love to visit these ladies and taste THEIR pitzudos!!!
hi Randy, yes I think the underlying philosophy is making the most of what you've got - so finding good cheese swaps local to you is fine! best wishes, Vicky
minute 6:08 the exact term is "domus de janas", (= "witches' house"). These are collective tombs from the pre-Nuragic era - Recent Neolithic to the Early Bronze Age (4400-2000 BC)
Brave!!! My wife and I came across your channel yesterday and we love it. In this video you mentioned that there's a festival In Ovodda with a focus on the Pitzudos. Do you know when that festival is and what it's called? Grazie!
Looks delicious. Also, their accent almost sounds like a Spanish person speaking Italian. Is this typical for Sardinia? I know there is a separate language (Sardo) there as well.
Beautiful video, as usual. A little edit: it’s Domus De Janas, not Deiana. It means “house of the fairies”, and are small one-chamber prehistoric tombs you can find in Sardinia.
@@pastagrannies no apology needed Vicky, you are doing an amazing job and - as an Italian living abroad - I thank you for that. Wish you all the very best.
It's a play on the verb 'filare' which has two meanings in Italian: to spin or string, and the slang/informal 'get to together' with someone. best wishes, Vicky
Imagine you’re a woman, because you’re told women cook and clean the house while men just work, but as a woman it’s your job to cook for everyone and have to serve men. So wrong. Every thing should be fifty fifty. Women do more work than men. And nothing we do is even that hard.
Molto bene! I definitely think you need a slightly fat, balding Englishman to accompany you guys to taste-test everything... just for quality-control purposes of course.... 😂
Buona Pasqua to the team at Pasta grannies and to all the wonderful nonne..every video is a treasure of Italian tradition.
Thank you and I hope you had a happy Easter as well. best wishes, Vicky

As a man I adore seeing these traditions, I think I’m Italian, this speaks to my heart so much.

Delicious and hearty! The sort of food that will "stick to your ribs". Thanks for showing us.
And here we discover another delicious regional recipe !
A great recipe for cheese lovers ! 👍😋

hi Leah, okay thanks for the suggestion. best wishes, Vicky
A very unique version of a grilled cheese!! Looks absolutely delicious as those lucky husbands enjoy their treat!! TFS and Happy Easter! Sharon 😊❤
How I wished I was sitting at the table, tasting these! Loved the smiles all around. Thank you, Vicky and team, for bringing this deliciousness to us.
Our pleasure! thank you for being a fan, best wishes, Vicky
Oh wow! Those look excellent, just what you need after a day moving the beasts up to higher grass. Will be giving those a go very, very soon.

Aaaaaahhh! Benissimo! And greetings from Houston TX! 🎉🥂
Thank you for this marvelous video. I love getting a glimpse of these talented grannies.
Deepest respect for these Pasta Grannies for their hard work . Ooh for a bite of that crunchy cheese , oozy Sos Pitzudos!
This reminds of my grandma! She was born in Terralba near Oristano and would call them “seadas” 😍
Seadas are different. There are no potatoes in the filling. You can find the video recipe of seadas on this channel

Ask anyone in Sardinia, or anywhere in Italy really, where the best place in town to eat is and the answer is always the same, “My nonna’s.”

You need to find a Pasta Granny that uses Sardinian casu martzu cheese. Saw the cheese on Bizarre Foods. 😎
That will definitely do me 👍

I think he was referring to Joseph and Mary starting their love affair, probably an old saying of theirs (Google translate)
