Pineapple upsidedown cake is one of the first cakes I made on my own. You can use a yellow or golden butter cake, substitute the pineapple juice for the water, and substitute butter for the oil. Add an extra egg if you like a richer cake. My mom taught me to brown the sugar and butter on the stove in the cake pan before you layer the pineapple and cherries and it always gives you a brown caramelized top.
