My friend who lives in Hawaii gave me this type of recipe and I call it Cal’s Chicken. Back in the day I only had soy sauce, some sugar, chicken and half a cup of rice. It was no-frills but was certainly better than plain rice and dry chicken breast. It was a life saver when I was broke a few days before pay day.
One of my favorite recipes my wife cooks is a whole chicken like this. It feels like a mini Thanksgiving everytime. I highly recommend for anyone who hasn't cook/eaten one to do so soon!
Nicely done. One thing you can try is instead of brushing the chicken with sauce, brush it with some maltose instead. Not sure if it's common or maybe it's a Hong Kong thing but it's what my mother does instead.
This is a very popular dish in Hawaii. Brought here by Chinese and Filipino plantation workers. Except we call it shoyu chicken (shoyu is a Japanese word for soy sauce).
The best part about this is if you have leftover sauce, you can freeze it and use it like a master stock for the next time you make soy sauce chicken. It's infused with chicken fat and gelatin as well, so it gets better and better every time! And if you really want to maximize tenderness, you can follow the hainanese chicken technique of cooking the chicken off heat. Bring the liquid to a boil, put in the chicken, and once it comes back up to a boil, you can put a lid on and turn the heat completely off. Should take about 50-60 min. Great recipe! Soy sauce chicken is a staple in my family :)
