  • Eggless Carrot Cake | Best Winter Cake Recipe | Super Soft & Moist Cake Recipe | Tea Time Cake
    Ingredients:
    • All-purpose flour - 1 cup
    • Fine semolina - ½ cup
    • Grated carrot - 2 cups
    • Baking powder - 1 tsp
    • Baking soda - ¾ tsp
    • Cinnamon powder - 1 tsp
    • Nutmeg powder - 2 to 3 pinches
    • Walnuts - ½ cup
    • Sugar - ½ cup
    • Oil - ½ cup
    • Curd - ½ cup
    • Vanilla essence - 5 to 6 drops
    • Orange juice - ½ cup
    • Desiccated coconut - ¼ cup
    Recipe:
    1. Preheat the oven at 180 degrees and line the cake tin with parchment paper in advance.
    2. Add all wet ingredients except Orange juice in a bowl and whisk them nicely.
    3. Add dry ingredients through a sieve. Gently fold them together.
    4. Add grated carrot to the batter and fold it in.
    5. Add orange juice, chopped walnuts and desiccated coconut to the batter and give a final mix.
    6. Pour the batter in tin and tap to release air bubbles if any.
    7. Bake at 180 degrees for about 35 mins or until the knife comes out clean.
    8. Let it cool down completely before demolding it.
    9. Enjoy it warm with tea of coffee.
