That could mean the oven temp is too high, causing the leavening agents to expand too quick; left in a few minutes too long; too much leavening agent; or simply slightly overfilled cupcake liners. Cupcakes are a lot trickier than people give them credit for!
hello, I would like to ask a question... I'm going to bake red velvet cake and I don't want to use cream cheese frosting for the filling. I would like to use a chocolate filling with cream cheese as frosting. I have been searching online for a chocolate filling and I got lost... my question is, which chocolate filling goes best with red velvet cake, chocolate mousse or whipped chocolate ganache ? do they even have the same taste ? thank you so much in advance...

Yeah temperature affects it to form a dome. and for cracks means you have over mixed the batter
