Traveling through Pakistan for the amazing food with my friend Ali Hamdani ( / alinhamdani ) was one of the most memorable trips I’ve taken. If there’s one single dish that represents the incredible food, culture, and community of Pakistan, it has to be a karahi.
In this video, we’re heading to the street food cart at home, and we’re going to cook an authentic Pakistani street food chicken karahi recipe. Let’s get started!
Ingredients (and please note, these are estimates, I’m a firm believer in taste testing, so feel free to add more or less according to your taste):
1 chicken - about 1 kg, could be more
¼ cup oil - vegetable oil with high smoke point
8 cloves of garlic
50 grams ginger
Salt to taste
5 tomatoes - up to you depending on how tomatoey you want it
1 tbsp cumin
1 tbsp coriander powder
1 tbsp chili powder
1 tbsp garam masala
½ tbsp black pepper
½ tsp turmeric powder
10 - 15 green chilies
1 - 2 tbsp dry fenugreek leaves
Slice of butter - at some places they use an entire block of butter per karahi - but at home I used a slice, about 20 grams.
30 grams ginger - julienne slices for garnish
Fresh coriander - handful chopped
More green chilies to garnish on top
Method:
First heat the oil, and fry the chicken until golden on edges.
Peel and pound ginger and garlic, and add to chicken.
Add in salt to taste - ½ tsp first
Toss in the tomatoes, and simmer for 15 - 20 minutes. You can add water if it get dry.
When the tomatoes are soft, remove the skin, and mash tomatoes into a sauce. Cook until tomatoes are fully dissolved and chicken is tender.
Add in all the dry spices - cumin powder, coriander powder, chili powder, garam masala, black pepper, and turmeric powder. Continuously stir, and add water if it gets too dry.
Add sliced green chilies, and fenugreek leaves. Continue to simmer.
Add butter. Continue to simmer, but at this time you want much of the liquid to boil out so you’re left with a thick spice rich sauce.
Julienne the ginger, coarsely chop the coriander leaves, and cut in half some more green chilies. At the end, toss them all in, fold into the chicken, and turn off the heat.
Ready to serve.
Best eaten with any time of flatbread.
Simple roti
250 grams Atta flour
200 ml water - You may need to adjust

Made this tonight. Usually, I make “takeaway style” Indian curries using a homemade base gravy but you need a day to make it. This recipe was everything I wanted it to be ( and super quick). Will certainly be making this again, thank you!
Indian curry are way to spicey. Too many herbs n spices complicating everything and stomach. These pakistani ones are simple and tasteful

@@abrahmicsupremacist38 absolutely delicious- it was pretty easy to put together as long as you have everything on hand and ready to go! I used a whole chicken it was 2kg and 1 canned tomatoes with 2 whole ones, def needed 1 more to make it more saucy it was a bit too hot for my 1,3 and 6 year olds, though. Will make again for sure! The coriander, ginger and butter melted at the end was an awesome finishing touch!

Years ago I was consulting in the DC Area - Tysons Corner. Some of my great Indian co-workers knew I liked Indian food. They sent me somewhere out of town to this place that server Chicken Karahi. They said just go, just please go and eat it. It was hands down one of the greatest culinary experiences of my life. Fresh, fresh, fresh OMG. I ate it like an animal with my hands by the end. Nobody told me how to eat it but a fork was not an option - yes I tried and they MUST have laughed at me in the kitchen, LMAO. I was 'both hands in' by the end and I mean literally.
Yay it must really have been a new experience for you , did you know about naan or roti ? Did you order naan ..... If you did were you surprised what to with it.
I think you should have asked for a spoon , I think they would have been hospitable enough to give it to you.

The point was----at the time it was the most fresh food experience of my life at that point. It was still one of the top 3 culinary experiences in my life. So YES I loved it. It's so interesting seeing a person that's not native to Pakistan share the same love for chicken karahi as I do lol. I always tell people about Pakistani food but they think I'm being biased. Some of the best food in the world for sure. Mark has officially joined the ranks in our pakistani Karahi brotherhood.
We live in a world where Pakistani cuisine is overlooked. To many people curries only come from india. Not true. Dishes like biryani have Persian origins. Balti dishes are not indian. It takes its name from baltistan which is in northern Pakistan. Chappli kebabs are not indian but hail from pakistan. Nepal have curries as does Bangladesh.
