Please watch to the end of the video and note how the fan does not reverse direction if you reverse the power wires, so it will not work with an H-bridge IF your goal if to reverse the fan's direction. If you connect the fan's positive wire to an H-bridge output and the negative wire to ground, you could still use the H-bridge to control the fan similar to how you use a transistor.
The gate is normally connected through a resistor to ground in order to turn off the mosfet. Otherwise it stays on once turned on by the Arduino pin.
