Making food for backpacking - Beef Stroganoff

  • So today I want to make some dry food for camping/hiking using my harvest right freeze-dyer. However, in the process, I am going to be making some beef stroganoff which turned out to be ideal for freeze-drying.
    This was inspired after talking to a friend of mine who goes hiking with his family. When camping on the first night he really likes to have some of the prepackaged freeze dryer food you get from rei or Costco. The problem with this stuff, other than the coast, is the fact that there is a high level of salt in the dish, which is perfectly great when you are actively hiking, but when he is just camping with his family, it’s quite high for his children.

    2 medium onions
    16 Oz 450 g of Mushrooms
    1 lb or 500 g of Sirlioin steak
    2 tablespoons of butter
    1/4 cup or 35 g of flour
    6 cups or 1.5L of Beef Broth
    1.5 cups or 250 g of Sour Cream
    12 oz package (350 g) of uncooked egg noodles
    Healthy shakes of worstershire sauce
    One healthy dose of love.

    I love your videos, but pls sharpen your knife and learn better cutting technique! The fact that you were struggling to slice mushrooms and you took two passes to slice beef that thin is scary; combined with the fact that your thumb is always in the way of your knife.

      Partially freezing the beef also makes it easier to cut!

      @@FlavorLab you can't go wrong with a japanese whetstone. A sharp knife is always safer than a blunt one.

    I’m not sure where you live, but in the US at least store-bought beef broth is notoriously diluted, because the regulation around it is much more lax than for chicken broth. Generally if a recipe asks for beef broth I don’t even bother, just use a low/no sodium chicken broth (or just water) and add some beef better than bouillon. This lets you up the beefiness if you want to, at the cost of not having as much control over how much salt you want.
    Homemade beef broth is different obviously, and if you happen to have some of that, it will knock your socks off.

    Have you talked about this somewhere else or could you vacuum-seal the freeze-dried food instead of using an oxygen absorber? If so, what are the pros and cons?
    Because that's how the backpacking meals I used to buy was packaged IIRC.

    Pemmican is great for hiking too. Not really family food but '2 Guys & A Cooler' have a great recipe on it.

    When deglazing the pan and don't wanna use alcohol don't use water it will dilute the flavor try a white wine vinegar instead as a little acidity is excellent.

    When I went to Philmont Scout ranch we ate these freeze dried dinners every night and the beef stroganoff was my absolute favorite, thanks for making it!

    The first time I went backpacking with my husband, he brought along freeze dried meals. They were light, tasted good, but they were pretty expensive. I had no idea you could make your own!

      @@speleothem4682 i think a camping substitute would be to make cook off ground beef mushroom and onion paste mix some browned milk powder and regular milk powder, dehydrate, portion and add dried egg noodles

    Oof, just one word of advice (because I cut up some cabbage for coleslaw 2 hours ago with last years christmas present): sharpen your knifes! It looks very dull and a sharp knife is so much better with the kitchen work! And I still have to convice my wife, that a freeze dryer for 3k is totally a-okay...

    Could freeze-drying the pasta separately from everything else help, though? You clearly struggle to eat this in the end of the video as pasta is pretty damn hard. I think it could be better if you let the pasta sit in bolied water for some time, then remove the excess water and add the rest (also freeze-dried, but separately). It'd probably look like instant noodles with a "brick" of pasta and a separate bag of, well, everything else.

    Great video but you need to sharpen your knives, they're more dangerous when they're blunt because you can slip easy.

    I don't know how to say it but I don't think everyone here has a freeze dryer. I really wish I could have one but they're really expensive. So what I want to say is, maybe making recipes with the freeze dryer isn't such a great idea😅.
