So the question is, since you stated that we should keep our cv as minimal as possible: how do we show this to our maybe-employers?
Or is this more something that I can bring in when you're actually employed?

It could be a bit of both. For instance, if you were applying to a company that built software for realtors, you might include the time you worked as a realtor on your resume. Other times, there might not be a direct correlation, so you might bring it up in the interview as a bonus (or include it briefly on the cover letter).

I owned my own business for 16 years and thought that would be great on my resume. No one cared. I talk about it in interviews when relevant but it’s not taking any space on my resume. Kind of depressing actually 😢 It was even a tech business. Didn’t matter.
It does depend on how you talk about it and how you list it. Often, people use "self-employed" or "consulting" to cover up large gaps in their resume. You are probably being lumped into that crowd. You have to differentiate yourself and show why your experience is "more valid" (not a great phrase, but you get the idea). Clear, valuable examples with screenshots and writeups could help. So will customer reviews.
I had a team of ~20 with annual revenue north of $750k. Everyone has heard of some of my clients. Very prominent internationally. Honestly I think it had more to do with the low to mid level management who don’t think like you or I. I think people will need to be intentional about getting people to understand why they should care about that experience. I had the “farm kid” discussion with someone once and they said “oh, I never thought about that” City slickers don’t understand how hard working on a farm is.
