Very good but one thing you missed about the truck is that you could also tip the tank backwards up to a 45 degree angle. You can have the tank in this position to dump and washout the remaining mud and debris with your water hose.

Commercial trucks aren't too bad, you just have to stay aware of their size. You may also need to learn how to operate a manual transmission, since they're much more prevalent in vehicles of that size.

Not on the style of truck shown in the video, but yes some styles of hydrovac have tanks that can tilt.
I was recently offered a job like this. Maybe its because I have my cdl class a license because I don't have any experience in this field.

Cut about 6’ off hose on the boom you would be able to move it around better...especially when the ground is real rocky
Can't because the truck has to clear a certain amount of feet from the excavation site. Safety reasons.
