@@1824walkerfarmhouse I buy apples from a local orchard and make a point to get at least 3 to 5 varieties. They have heirloom apples and always have flavor descriptions. Years ago an elderly friend advised me to mix apple varieties for cider and apple butter as it makes the flavors rich and interesting. I first cook it on the stovetop until the flavor seems right and the butter is good and thick. Perfectly ok to stop there. Of course seasonings are cinnamon, cloves, nutmeg, and, just a bit of allspice. If you like sassafras it’s fine to include a small piece of root. But I try to be careful not to get much as the root beer taste can overwhelm the apples. I’m afraid I don’t measure - just add to taste. I put it in a well seasoned cast iron pot, into a 250 to 300 degree oven, pop the lid on, and cook all day - 6 to 8 hours is fine, more if you wish. I can’t explain, but we think it’s a wonderful flavor, almost as if it had been cooked on an open fire outside. I haven’t tried cooking it over an outside fire, but would love to try. I think I have written way too much, but hope this is helpful. Nothing fancy, but I always think of my ancestors and all the women long ago who created butters for putting up. I did huge amounts of wild plums one year - plums are just as effective as prunes. ( who knew?) I gave plum butter to many friends/family as gifts. Tasted terrific, but the results were not appreciated. So I stick to apple butter. I’m Cathy, my husband is Steve, we live in an old log cabin in Southern Indiana. Oh! I forgot the bit about adding sugar to taste. I have used dark brown sugar and white. Doesn’t seem to matter. And I have added some molasses some years, just a quarter cup, or so. So, I am afraid there is no recipe. Just flavor experiments. 😊

How do you keep the deer/squirrels from eating up your apples, etc.? We NEVER get anything off of our fruit trees because they eat it all up!! THANK YOU FOR SHARING!!
We use to get them but our Blue Spruce trees died and we haven't had the squirrels since they are gone. The deer do check out the trees but aren't too hard on them. Thank you for watching!
Potato bird needs a toothpick beak! Our apple trees are too young to provide much, but our pear trees produce literally THousands of pears ; would love to see some pear recipes if you have them in future.
