  • Perhaps one of the most well-known Christmas breads. Stollen is a traditional German festive bread. Filled with dried fruit and nuts. Flavoured with nutmeg, orange, and cardamom. And a whole log of marzipan running through the middle. These is a lot going on, but it all works together well making this bread super delicious.

    Nice variation: Let the dried fruit soak in some rum. That gives it even more flavour.

    This recipe looks amazing. I'm in the UK and only ever had commercial Stollen, myself. Every Christmas, if there was any food my parents used to buy, it was Stollen, Panettone and Rum Truffles. I love all 3 and I think I want Stollen to be the first I make myself so thank you for this wonderful-looking recipe!

    The Dutch version of this uses almond paste instead of marzipan, they generally consider more almonds as more luxurious/premium in their baking/pastries. This is a bit easier to spread on your slice if you are one of those people and the taste fits the bread a bit better imo, but that is just preference.
    Speaking of dutch, have you ever looked at the dutch "Tijgerbrood"? I believe it is called Giraffe bread in the UK. I love the thick crispy crust for a good sandwich.

    I like your explanation why the kneading and sequence of adding ingredients.
    However, I know Stollen with more spices (+ cinnamon, cloves etc) and to soak the dried fruit ahead of time. More testing needed now! :D

      Sure there are various ways to make it :) and I do love my cinnamon too 😊 when it comes to the dried fruit I always say - if you're not using grandma's 5 year old raisins from the back of the cupboard, then it's likely you won't need to soak anything 😂

    Yes, I know, It's a long time until Christmas, but in my country we're in winter, it's cold outside, and I crave for this kind of breads, so I was watching this video, wanting to eat this stollen, but given that you now are baking bread with the no knead method (and, thanks to you, now I'm doing that too), I have to ask: do you think that stollen (or any of the breads in your Christmas list) can be made with that technique? I saw that you did that already with panetone and pandoro (two clasics in my Christmas baking), but I never tried the no knead method with them... yet (I plan to do it, though). Maybe you can remake all this recipes with this new way of kneading (or no kneading, bah)

    Bread baking 101 - I always thought any dried fruit inclusions should be hydrated first to prevent drying up the bread? I have not seen stollen made with dried mixed-in without any soaking liquid.

      Depends. If you're using grandma's raisins that have been sitting at the back of the cupboard for years, then it's a good idea to hydrate them. But if you're using fresh ingredients they should be moist enough most of the time.

      @@ChainBaker Oh my fortunately so far I have not seen any raisin dryer than my grandma's lol :p then again I probably will still soak it in some orange juice or rum to infuse more flavours :)
