  • Few people know this secret! An old baker from France taught me! Try these delicious airy dough buns. The dough is like a cloud! Choux pastry is a real discovery! Let's bake these rolls together!     Ingredients and recipe:
    - Warm milk 200 ml
    - Dry yeast 7 g (2 tsp)
    - Sugar 3 tbsp.
    1. Mix with a whisk
    - Melted butter 40 g (2.5 tbsp)
    - Vegetable oil 40 ml (2.5 tbsp)
    - Eggs 2 pcs.
    - Salt 1/2 tsp.
    2. Mix all ingredients with a whisk
    - All-purpose wheat flour 500-550 g (add in parts)
    - Cornstarch 2 tbsp.
    3. Mix all ingredients with a spatula
    4. Knead the dough in a bowl for 1-2 minutes
    5. Place the dough on the table
    6. Knead for 4-5 minutes, the dough should become smooth and not stick to your hands.
    7. Grease a bowl with vegetable oil
    8. Cover with a towel and leave for 50-55 minutes
    9. The dough has risen well, look how beautiful it is!
    10. Dough weight 973 g.
    11. Divide the dough into 12 equal parts
    12. Roll them into a ball.
    13. Place each ball on baking paper
    14. Cover with a towel and leave for 10-15 minutes
    15. The dough has risen a little, you can work with it
    16. Roll out a piece of dough into a circle (12-14 cm).
    17. Cut into 4 identical triangles (like pizza)
    18. Fold each piece like in the video
    19. Place them on top of each other
    20. Press down with a chopstick, repeat after me
    21. Place on baking paper
    22. Do the same with the remaining pieces of dough.
    23. This is amazing! Makes very nice buns
    24. Cover with a towel and leave for 25-30 minutes
    - Egg yolk 1 pc.
    - Milk 1 tbsp.
    25. The buns have risen, look how beautiful they are!
    26. Lubricate with a brush
    - sugar 1 tsp.
    - Chia seeds 1 tsp.
    27. Sprinkle with chia and sugar
    28. Bake at 180°C (360°F) for 23-26 minutes
    29. In the last 4-5 minutes you can cover the cake with foil or baking paper to prevent it from burning.
