I think you can do this with Arsenal vs Tottenham, Chelsea vs Man United, Villa vs Newcastle, Liverpool vs City, Leipzig vs Leverkusen, Union Berlin vs Strutgart, Bayern Dortmund, Napoli vs Juventus, Atlanta vs Bologna, Real Madrid vs Barcelona, A three way with the top Turkish clubs etc. Just food for thought. You could also try smaller clubs maybe 2 championship teams, or mid table clubs that are approaching the top half. Crystal Palace vs Brighton would be mad.
Another interesting team to do a rebuild is take Orlando Pirates! Put them in the championship of England and only use players for Southern Africa if possible. Use the youth academy to build up the squad using only South African youths!

Could you please rebuild US Concarneau, who was relegated from ligue 2 after getting promoted this season. The context is really interesting because they never played at home because their stadium doesn’t meet the Ligue 2 requirements. So they spent 4 millions in travelling, half of their budget, so 1 signing. It is very unfortunate because the fans are really good
