You need to orient yourself with the direction you're facing with L3 to do the moves with R3 to work.

Toe to heel seems unnecessary. You can use R3 up, then down to do the same thing. What's the advantage pf doing it by pressing 4 buttons instead?

I use R1 as sprint button...yet I'm the best dribbler in my town...it just depends with how your fingers and conscious has been used to....

R1 is for quicker, more agile dribbling but if you hold R1 and R2 at the same time it does the agile dribbling whilst sprinting
