My favorite thing about your channel is that the videos tend to be 8-12 minutes long. You've got a great knack for getting the editing and scripting exactly right to fit maximum info into minimum time. FWIW! Thanks for many many many great meals since I started watching.
Agreed! The edited videos basically convey the exact same steps but they're a lot easier to just watch in one go. These types of "cook as you go" videos are very useful for beginner cooks though. Seeing everything done step by step without time cuts would be super helpful if you're not very comfortable in the kitchen yet.

I enjoyed this longer minute by minute episode. It really shows why professional cooks can get things like this done in the time frame suggested and home cooks struggle with it. I often find myself underestimating how long it will take me to make things because I never make sure my items are prepped and ready to go, and struggle with heat control and timing in my cooking. I loved this format, but think also your regular formats are great too, so I'd personally love to see a mix of the two. Also, something I think would be really cool is if you were to, say at the very end or beginning of the video, post the list of ingredients on the screen. I know they're in the comments, but when I'm using my phone to watch the video while I make it, sometimes its helpful to not have to have the comments section open.
Like the format very much! I am one of those people that watches a cook here on YT and they so sweetly say "This is my favorite recipe cause it only takes twenty minutes to prepare..." then I give it a try and I'm sitting down at the table an hour and a half after starting. Brian, remember the key to a great video... The more Lorn, the better the video is.

I felt that whenever he said commenters are like, “It’s an hour,” because the chicken parm was supposed to take approximately half an hour and it took me over 2 hours to finish it. HOWEVER! That chicken parm sauce is a STAPLE in my kitchen now. My brother begs me to make it at least once a week.
Same on the chicken parm haha. Took me at least two hours when I only planned for an hour. I thought doubling his estimate would be enough for me but not even close haha
the chicken parm recipe is now a standard in my house. we big batch cook the sauce and freeze it in dinner portions but the first few times it was definitely not a quick weeknight meal.
@@LauraRochonI live alone (by choice) so if I'm going to make the effort, (I love cooking/baking) I make a lot. Then divide it into single portions, and food saver it.
Update: 30 mins including washing the rice, pouring the dring and taking pics, yet excluding mushrooms. Yummy. Ah and broccolini instead of bok choć as I couldn't get baby ones in my city :(

I love this format for those weeknight recipes! This would still likely take me closer to 45 min but that is only because my chopping and organization skills in the kitchen are not as efficient as yours, so whenever I see an under 30 min recipe, I know it is going to take me a bit longer but that's ok. With that said, I really enjoyed seeing this in real time. Seeing your process in order to get it done in such a short time can definitely help me improve my skills

As a home cook, I am always attempting to “weeknight” more efficiently without all the know-how of a professional chef. Especially for your weeknighting series I appreciate this style video so much. I think people who struggle in the kitchen can benefit from watching every step of the process. So, YES, this videos should be on this channel however I feel if they are labeled correctly would be easier to find for beginners. really like this format, it´s a bit more "honest" (i know big word) than the usual heavily edited footage you normally see on cooking channels. this really grew up from the "weeds and sardines" days and still somehow feels the same (in a good way). Loved this video! I love digging into crazy complex cooking videos on weekends but these type of down-to-earth weeknight videos are the majority of our meals. These kind of videos are really inspiring to my tired, burnt-out self on random Thursdays when I dont know what to cook. They help me get off the couch (when I am insistent that yes, cheese crackers ARE a perfectly reasonable dinner) and get into the kitchen to use the veggies we have to make a good, tasty, nutritious meal.

Huge, huge, huge fan of this format. I get way fancier than I need to with most of my cooking and it always turns into 30+ min ordeals, but more _actual_ 15-20min recipes in this format would be amazing. I wouldn't even mind fast-forwarding (not cutting) through hurry-up-and-wait segments. Hoping for more of these here and there!
Possibly my favorite video from Brian. Truth is I’ve cooked like this dozens of times: quick high-heat chicken and veg stirfry during my lunch break. Obviously my sauce was never as good as this, but you can get real close with even just a Lodge cast iron or carbon steel pan on the hottest burner

YES!!! Much prefer this format! Please go to this as I can understand better the natural flow and process that can only be captured when you're actually doing it. It helps us to see your little things u do that u don't even notice u do. Some things we do the same and sometimes we pick up little handy tips. Anyway we can only see it when you're actually in gear. Peace out ✌️
Love it. I love to see actual cooking in motion. The finely edited with all the bells and whistles can sometimes be a bit remote in terms of not actually seeing the process. Agree with alot of the comments - this format is great for the weeknighting series. Love the vids, love the recipes, love the teaching of techniques (can't count how many times I've come back to a particular video just to double check how you cook poached eggs (for example)
Love the "weeknighting" videos! Stir fries are always a go-to weeknight dinner for us. A lot of times I'll even cut up the veggies and make the sauce ahead so when I get home it's like a 5-10 minute meal!
Great video! -this is something I struggle with when cooking: nesting tasks and having multiple things "on the go" to combine into the dish in an efficient way. There's a lot of stuff here I can take away. I naturally tend to really compartimentalize cooking and do one thing after the other instead of re-organising it to save time. The results are good, no qualms there, but it just takes me longer than necessary and the thing is I only realise this after the fact, not when I'm in the middle of doing it and could, possibly, rethink and adjust...
I haven't used bok choy even though I love preparing Asian dishes. Will certainly incorporate from now on!! Great to see Lauren's input and showing up on camera. You guys make a great team!!
Really enjoyed this! My husband (who's the cook in the family, Im the baker) watches a ton of Asian cooking YT channels. What you made has some authentic techniques, but more accessible. Also, peeled garlic is the sh*t and anyone who tries to shame you for it is wrong.
Love this format. Feel free to mix them in with your regular videos. This recipe is going to save us a lot of money on Chinese takeout. I can see how easy it would be to change up the protein and veggies but use the sauce as a base. Thank you.
Definitely love the "real time" format. It's definitely good for the Weeknighting series so hopefully we'll get more of those. I have a new wok I haven't had the chance to use since I had to get rid of my old one, so I think this'll be a good one to break it in!
Yes, we Chinese people salt as we go or as needed too, or we pre-season by marinating the ingredients, and sometimes we only salt and season close to the end. And it's totally cool that you mentioned wok hei, it's a must for me for any stir fry!!! 🤘

Week nighting is hands down my favorite series. I use the Indian chicken dish at least once a month for my lunches. Keep these up!!!

YES!!! Much prefer this format! Please go to this as I can understand better the natural flow and process that can only be captured when you're actually doing it. It helps us to see your little things u do that u don't even notice u do. Some things we do the same and sometimes we pick up little handy tips. Anyway we can only see it when you're actually in gear. Peace out ✌️

Love it. I love to see actual cooking in motion. The finely edited with all the bells and whistles can sometimes be a bit remote in terms of not actually seeing the process. I loved your last video with the tacos with your friend. Just seeing it happening. And the addition of Lorn is a touch of family. I've always got my sig other in the kitchen with me when I'm cooking. Stir fries are always a go-to weeknight dinner for us. A lot of times I'll even cut up the veggies and make the sauce ahead so when I get home it's like a 5-10 minute meal!
Great video! -this is something I struggle with when cooking: nesting tasks and having multiple things "on the go" to combine into the dish in an efficient way. There's a lot of stuff here I can take away.
I naturally tend to really compartimentalize cooking and do one thing after the other instead of re-organising it to save time.
The results are good, no qualms there, but it just takes me longer than necessary and the thing is I only realise this after the fact, not when I'm in the middle of doing it and could, possibly, rethink and adjust...

Really enjoyed this! My husband (who's the cook in the family, Im the baker) watches a ton of Asian cooking YT channels. What you made has some authentic techniques, but more accessible. Also, peeled garlic is the sh*t and anyone who tries to shame you for it is wrong.

Definitely love the "real time" format. It's definitely good for the Weeknighting series so hopefully we'll get more of those. I have a new wok I haven't had the chance to use since I had to get rid of my old one, so I think this'll be a good one to break it in!

Yes, we Chinese people salt as we go or as needed too, or we pre-season by marinating the ingredients, and sometimes we only salt and season close to the end.
