Agreed! The edited videos basically convey the exact same steps but they're a lot easier to just watch in one go. These types of "cook as you go" videos are very useful for beginner cooks though. Seeing everything done step by step without time cuts would be super helpful if you're not very comfortable in the kitchen yet.
I felt that whenever he said commenters are like, “It’s an hour,” because the chicken parm was supposed to take approximately half an hour and it took me over 2 hours to finish it. HOWEVER! That chicken parm sauce is a STAPLE in my kitchen now. My brother begs me to make it at least once a week.
Same on the chicken parm haha. Took me at least two hours when I only planned for an hour. I thought doubling his estimate would be enough for me but not even close haha
the chicken parm recipe is now a standard in my house. we big batch cook the sauce and freeze it in dinner portions but the first few times it was definitely not a quick weeknight meal.

I enjoyed this longer minute by minute episode. It really shows why professional cooks can get things like this done in the time frame suggested and home cooks struggle with it. I often find myself underestimating how long it will take me to make things because I never make sure my items are prepped and ready to go, and struggle with heat control and timing in my cooking. I loved this format, but think also your regular formats are great too, so I'd personally love to see a mix of the two. Also, something I think would be really cool is if you were to, say at the very end or beginning of the video, post the list of ingredients on the screen. I know they're in the comments, but when I'm using my phone to watch the video while I make it, sometimes its helpful to not have to have the comments section open.
In some bizarre set of coincidences I literally have everything I need to make this tonight so I will be doing so! Absolutely love this format. Also loved the collabs with you and Ethan, my other favorite PHC. You guys rock. Keep up the good work. A wok is the mainstay of lots of my cooking, basically anything that needs mixing/stirring/ tossing or (rarelt) deep frying. I wouldn't be without one😁

I think people who struggle in the kitchen can benefit from watching every step of the process. So, YES, this videos should be on this channel however I feel if they are labeled correctly would be easier to find for beginners. I am not a beginner cook, so I love watching your takes on recipes, and not chopping and wiping. I hope that makes sense I know you like the feedback. YES!!! Much prefer this format! Please go to this as I can understand better the natural flow and process that can only be captured when you're actually doing it. It helps us to see your little things u do that u don't even notice u do. Some things we do the same and sometimes we pick up little handy tips. I see the value in this type of videos sporadically, but I can't say this is the kind of content I come from. There's a dime-a-dozen of "15 minute lunch" video people in the UA-cam for you to become just another one of them. The world has enough protein+carbs+vegetable stir fry recipes. I came here because you taught me how to start a sourdough starters, how to fold dough, how to shape pizzas, how to create different sauces, how to make ricotta at home, etc. Lately, the content just feels too "Pro Home Cooks" like, which has his own value in it, but there are only so many "quick weeknight recipes" videos I can consume before I grow bored of them.
I love this format for those weeknight recipes! This would still likely take me closer to 45 min but that is only because my chopping and organization skills in the kitchen are not as efficient as yours, so whenever I see an under 30 min recipe, I know it is going to take me a bit longer but that's ok. With that said, I really enjoyed seeing this in real time. Seeing your process in order to get it done in such a short time can definitely help me improve my skills
Possibly my favorite video from Brian. Truth is I’ve cooked like this dozens of times: quick high-heat chicken and veg stirfry during my lunch break. Obviously my sauce was never as good as this, but you can get real close with even just a Lodge cast iron or carbon steel pan on the hottest burner
Loved this video! I love digging into crazy complex cooking videos on weekends but these type of down-to-earth weeknight videos are the majority of our meals. These kind of videos are really inspiring to my tired, burnt-out self on random Thursdays when I dont know what to cook. They help me get off the couch (when I am insistent that yes, cheese crackers ARE a perfectly reasonable dinner) and get into the kitchen to use the veggies we have to make a good, tasty, nutritious meal.
Please make more of these! Seeing how the sausage is made, with all its imperfections, is always good, and serves as positive reinforcement. I feel much clumsier in the kitchen after watching a couple of your videos, but this kind of video really helps!
Huge, huge, huge fan of this format. I get way fancier than I need to with most of my cooking and it always turns into 30+ min ordeals, but more _actual_ 15-20min recipes in this format would be amazing. I wouldn't even mind fast-forwarding (not cutting) through hurry-up-and-wait segments. Hoping for more of these here and there!
really like this format, it´s a bit more "honest" (i know big word) than the usual heavily edited footage you normally see on cooking channels. this really grew up from the "weeds and sardines" days and still somehow feels the same (in a good way). I am one of those people that watches a cook here on YT and they so sweetly say "This is my favorite recipe cause it only takes twenty minutes to prepare..." then I give it a try and I'm sitting down at the table an hour and a half after starting. I've learnt a lot from youtube videos over the last 10 years, but your channel is by far the best at teaching general cooking with techniques, flavor pairings, idealogies, contrasts and all that. I like both: the short "pro" videos that are crammed full of tips and tricks and this "live" style for the weeknighting series. I liked that you both ate and danced at the end 🙂
I like this style of video, I think it lends itself well to the whole Weeknighting approach & experience. If I had a note to share it would be that Brian's chatter gets a little TV cheffy in these real-time videos compared with the usual voice over, but not offensively so.
I can see how these videos would be helpful for absolute beginners to maybe boost confidence, but personally I much prefer your typical video style. They're so well put together and pleasant to watch and TO ME still convey everything needed. This was a super simple meal that didn't need 25 mins, IMO.
I like this format. I typically prefer shorter videos unless, like this one was engaging, kept my attention, and showed me a lot of things to try. Also a question, do you refrigerate your Asian condiments (soy sauce, fish sauce, oyster sauce, etc? I find the more I get into Asian cuisine the more space in my fridge is needed for sauces. Anyone else experience this?
This was an amazing experience, I felt almost like being together with you in your kitchen! Especially seeing you also doing all the prep in real-time, not just showing us plastic bowls filled with pre-chopped/pre-sliced/pre-measured everything 😅 I am hoping to see more content like this!
Loved this format, especially for wok cooking, which is fast cooking. Prep is crucial and I liked how you made it work within the time frame. I love stir fry so I'm now leaning toward getting a wok since the non-stick pan can't get as hot. P.S. I also like your "regular" videos for some of the other dishes. Thanks.
I despise mushrooms so I'm glad Lorn mentioned people being concerned about subs. I might want to try this with red bell pepper instead of shrooms and possibly do the broccolini sub because that might be easier for me to locate than bok choy. Which feels like one of those "I made this recipe and substituted everything" statements but also... inspired by the video. I also like to have lots of color in my meals, so that would be another reason for bell pepper instead of mushrooms.
I’d love videos like this every now and then. It’s nice being able to watch how you manage the kitchen time and space. I do love the brevity and pacing of your usual videos too though
I love how Brian is literally laughing as he sets the timer, as he should. Everyone has different skill levels within cooking guys. A few times of doing the weeknighting recipes and you’ll be flying through. No sense in complaining about a dude’s videos who puts out great content literally every time he drops a video. I've learnt a lot from youtube videos over the last 10 years, but your channel is by far the best at teaching general cooking with techniques, flavor pairings, idealogies, contrasts and all that.
I'd say what it's missing, which I'm not missing at all, is plating. Cause I hate plating ;).

I like this style of video, I think it lends itself well to the whole Weeknighting approach & experience. If I had a note to share it would be that Brian's chatter gets a little TV cheffy in these real-time videos compared with the usual voice over, but not offensively so.
The dancing at the end is the cutest thing ever!

I can see how these videos would be helpful for absolute beginners to maybe boost confidence, but personally I much prefer your typical video style. They're so well put together and pleasant to watch and TO ME still convey everything needed. This was a super simple meal that didn't need 25 mins, IMO.

I like this format. I typically prefer shorter videos unless, like this one was engaging, kept my attention, and showed me a lot of things to try. Also a question, do you refrigerate your Asian condiments (soy sauce, fish sauce, oyster sauce, etc? I find the more I get into Asian cuisine the more space in my fridge is needed for sauces. Anyone else experience this?

This was an amazing experience, I felt almost like being together with you in your kitchen! Especially seeing you also doing all the prep in real-time, not just showing us plastic bowls filled with pre-chopped/pre-sliced/pre-measured everything 😅 I am hoping to see more content like this!

Loved this format, especially for wok cooking, which is fast cooking. Prep is crucial and I liked how you made it work within the time frame. I love stir fry so I'm now leaning toward getting a wok since the non-stick pan can't get as hot. P.S. I also like your "regular" videos for some of the other dishes. Thanks.

I despise mushrooms so I'm glad Lorn mentioned people being concerned about subs. I might want to try this with red bell pepper instead of shrooms and possibly do the broccolini sub because that might be easier for me to locate than bok choy. Which feels like one of those "I made this recipe and substituted everything" statements but also... inspired by the video. I also like to have lots of color in my meals, so that would be another reason for bell pepper instead of mushrooms.

I love how Brian is literally laughing as he sets the timer, as he should. Everyone has different skill levels within cooking guys. A few times of doing the weeknighting recipes and you’ll be flying through. No sense in complaining about a dude’s videos who puts out great content literally every time he drops a video. Keep up the great work Brian.
