    This is literally the best sushi channel on UA-cam. It is so difficult to find information on sushi topping (salt and citrus in this case). Keep up the good work!

      @@AkirasansSushiatHome btw Akira San, I tried making nigiri but due to issue with my right hand (my right hands is stiff and it isn’t as coordinate/precise as my left one due to previous work related issue) I keep failing. Is there any other proper way to do nigiri without too much usage of right hand?

      Fei Yang Zheng san, would there be no issue using your lefthand? If so you can swap all instruction other way around..Lefthanded sushi master does all process with opposite hand as my video (i.e. start by holding shari with left, fish with right)
      It may be difficult at first but this works too👍😊
      Also Kotegaeshi(simplified hand motion of Hontegaeshi) may be more hand friendly for you, will make a video of that soon☺️💓

    That's an interesting process. I must try it! I usually buy my Salmon at Costco but I don't do all that. I just thoroughly wash the fillet in (Brita) filtered ice cold water and rub a very small amount of kosher salt into only one side of the fillet. Never had a problem with getting sick from eating raw Costco salmon prepared this way!

    Thanks these are all great recipes, and also for the hontegaeshi breakdown. Watching professionals do the motions looks effortless, but highly technical, like a savory fish ballet. Breaking it down with slow motion makes me want to practice more in the kitchen.

    Are there chances of parasites for this type of salmon?

      Chances of parasites in Salmon sold COSTCO Japan is (I think!) pretty low...at least I've never came across one. However it seems that quality of salmon sold in COSTCO outside of Japan is different..so if you can bear that in mind, it would be great...

    Question: can you use the salt and sugar bathing technique on ahi tuna steak?

      Evan Rowe san, yes absolutely!
      One drawback is that the meat might harden a little too much since ahi tuna has lower content compared to salmon. So my advise is to shorten curing time 🐟 Good luck!

      Edward Deng san, nothing special at home..we have wooden one and plastic one, no particular brand😎If you are looking into purchasing a new one, consider a simple..perhaps Hinoki (japanese cypress) made ones!
