Its not 'wasted' if you put scraps in the compost, as it is used to make more food when put in the soil before planting your next crop, or around established plants and trees.

Do you think you could save the scraps in the freezer until you have enough and then make it? Would it still work?

True, but since the rind is still there to compost after making the jelly, there is no reason not to do both.

What is the name of the strainer you have used?
What else was it in besides orange peel?
There were apple cores and peelings also some lemon skins. I guess you could collect and keep them in the freezer until you have sufficient quantity.
