I cant see the periscope button you press for periscope depth, is that a setting?

So what should I do when I've alerted the enemy? Like you said, they start zig zagging and it's almost impossible to get another firing solution on them. If I go to the surface and use deisal engines to out l run them, I get shelled with deck guns. If I parascope depth, then I move to slow and the enemy closes a lot of distance on me. If I submerge and try to get away from their guns, they still ping me , move much faster over top of me and depth charge me. Can you give us some general tactics in uboat combat?
