I'm sending this to a mom I know who often has an uphill battle to get her kid to eat his s veggies (though to her credit, the child's favorite foods include black beans and rice, so she already doing great at getting her son to love good food) as it should help with this.

I have done roasted vegerables many times and one thing I disagree with you, you put all vegetables together a one time , potatoes, onions need more time I would roast them before for a while and add later the mushroms, zuchinni and tomatoes .

We regularly roast our vegetables like that but we always have Parsnips included. Parsnips are also great next to a roast joint.
