Hi, i'm confused about eating fermented food in right way. batter is heated while making idli or dosa. Doesn’t it kill all good microbes? If not, why can’t we heat porridge (ambali)?
Yes it will kill but the left over of those microbes help the existing gut microbes in a different way. This is the reason we eat idli and dosa. But we should also remember that we should only eat them once in a week as too much protein is not good for us.
Instead of white rice i am using millets and brown rice, too much of gas problem i am facing, if i take white rice gas problem will not be there, i am using millets continuesly, but not getting benefits as told, sugar level has been increased, may i know why it is happening? Pl
I'm going to start having this soon for the first time since I heard its very healthy. I'm going to have it only in fermented form whether as porridge or dosa and always with protein. 30 minutes before your meals have raw unpasteurised apple cider vinegar (1 tablespoon) in a glass of water. Drink with metal straw as its acidic and not good for your teeth. The fermented carbs + having it with protein+ having Apple cider vinegar 30 minutes before your meals will ensure better sugar control (You can do some research). Try that and report the results.
It's because your gut doesn't have enzymes and gut bacteria to digest those millets. What you should do now. One way is eat one table spoon of cooked millets for 2 weeks and increase to two tables for next two weeks.. You will find the difference.

Same process as in other seasons but ambali fermentation happens faster. It takes the same time the milk turns to curd. Take a small cup of milk and put curd in it at the same time you keep the ambali in the pot, the time milk turns in to curd, it is proof that the ambali fermentation too was done.
Generally In summer 5 to 6 hours enough for fermentation. In winter it takes 10 hours. In other seasons 8 hours. This is for general understanding and varies depends on how much summer heat and how much winter cool in the specific place

Should we cook raw or natural millets or their rice ? Is conversion of natural form into rice form essential for millets cooking ?
