  • • Orzo pasta: 1 cup
    • Shrimp: 250 g (peeled, deveined, and cut into smaller pieces)
    • Cucumber: 1 (diced)
    • Scallions (green onions): 3 stalks (thinly sliced)
    • Fresh dill: 1 tbsp (chopped, optional)
    • Feta cheese: ½ cup (crumbled)
    • Olive oil: 3 tbsp
    • Lemon juice: 2 tbsp
    • Salt and pepper: To taste
    Instructions:
    1. Prepare the Shrimp:
    • Preheat the oven to 180°C (350°F).
    • Cut the shrimp into bite-sized pieces and season them with salt, pepper, and 1 tbsp olive oil.
    • Place the shrimp on a baking sheet lined with parchment paper and roast in the oven for 8-10 minutes, or until they turn pink and are fully cooked. Set aside to cool.
    2. Cook the Orzo:
    • Bring a pot of salted water to boil and cook the orzo according to the package instructions (about 8-10 minutes). Drain, rinse with cold water, and set aside.
    3. Mix the Salad:
    • In a large bowl, combine the cooked orzo, diced cucumber, scallions, dill (if using), and feta cheese.
    4. Make the Dressing:
    • Whisk together the remaining olive oil, lemon juice, salt, and pepper.
    5. Combine:
    • Add the roasted shrimp and dressing to the salad. Toss well to combine.
    6. Serve:
    • Serve immediately or chill in the refrigerator for 30 minutes to let the flavors meld.
