The BEST way to cook a WHOLE CHICKEN on a kettle grill!

  • This is the best way to cook a whole chicken on a kettle grill.
    Start by spatchcocking the chicken, I recommend saving the spine for broth at a later date. Go ahead and pack the whole chicken dry. Separate the skin from the breast and the legs and then go into the cavities. You have created with some dry rub. We then want to put some butter in those same cavities then finish off the outside with a little bit of butter and more dry rub. Get your kettle grill up to at least 450°F and then put the chicken on to cook. My chicken cooked for about 45 minutes but I made sure it was cooked through with a thermometer which you should also do too.
    This is such a simple meal to make, and I can feed the whole family. I recommend trying to get free range chickens from your local farmers market. You can really tell the difference.     I made my first Spatchcocked chicken a couple of weeks back on my Weber kettle. My wife got a really good deal on two smaller birds, so I was able to put a basket on either side and lay the two birds down the middle. 40 minutes later we were up to temps and it was delicious. Thanks for sharing your version. I do the butter trick on Turkey, but I'll have to give it a go on chicken.
