Marshall, if you're still in Mindanao, try getting yourself onto Camiguin Island onthe north of Mindanao. A tiny island with lots of natural attractions (hot and cold springs, a soda spring, a gorgeous white sandbar in the middle of the ocean but it's main fame comes from being the most volcanic island in the entire planet (seven active volcanoes in one place!) So tiny the island easily circled round on a motorcycle in one hour! Non-touristy island, very local and wonderful tranquil place for one to unwind and recoup. Ferries from Bohol, Cebu, Dumaguete I think and quick flights to Camiguin's small airport from Manila and Cebu. The cheapest option is to bus to Cagayan de Oro City on the mainland in the province of Misamis Oriental and pick up a quick bus ride to Balingoan town and catch the 40 min ferry to Camiguin. The island is deservedly christened as the Tahiti of the Philippines.
Your usual upbeat take does not filter through the somewhat somber atmosphere of the place. It somehow lacks the festive energy of the other places you've been to.
In the UK a "Knickerbocker Glory" is a mixture of icecream and fruit in a tall glass with a biscuit wafer on top. Knickerbockers are knee length trousers.
Here in the Philippines, Shrimps almost always "need" to be unpeeled. It's as if it's the resto's way to showcase how fresh it is. :) If the head is firmly attached to the body (rather than wobbly and barely hanging on), if the meat cleanly snaps off of the tail part without the bottom part of the meat getting torn off, and of course... the bite must be consistently firm and sweet even without any sauce. I think you will get a lot of that quality there in Zambo. Yum!
