The my revision notes textbooks by Chris Eyre are brilliant for Religious Studies , he taught me at sixth form and I cannot recommend them enough for this course

Why would education of young be important? I was thinking - is the children aren't educated then they won't know the telos of their life. Is that a good importance?
Eudaimonia is Aristotle's view of human telos so applies only to him, however Aquinas is very inspired by Aristotle. So whilst Aquinas does not focus on eudaimonia he believes our telos is God like perfection so you can still mention it but as how Aquinas develops his views from this. Hope this helps :)

So if we want to fulfil our telos we must act in accordance with HUMAN nature, this being because God created humans as naturally inclined to do the good (synderesis rule)? What does nature actually mean? Also, is the eternal law just God’s will when he created human nature, this will beyond human understanding or is it just human telos of reaching god like perfection? (Sorry this is a lot, for some reason natural law won’t click with me and I’m really struggling to understand it)
A lot of what you said is actually good discussion for an essay. God's will is the mind of God so beyond our understanding but our telos is to work towards understanding this. As far as what is natural, Aquinas looked to the workings of nature hence reproduction, preservation of life etc. Our human nature is inclined towards goodness (synderesis rule) which leads us to making the right decisions inline with nature. Hope this makes sense :)

That would work well as an answer, education means that the young csn understand telos and know what is inline with synderesis and natural law :)

It would be a tricky question, you still would need to mention the 5pp, hierarchy and his approach just link it to DoDE. Hope that makes sense :)
