Master Pastry Chef, Shane Smith, has over 20 years’ experience working in some of the world’s most celebrated pastry kitchens across the globe.
Shane considers himself very lucky to have spent the past two decades in a career that fulfills him on a daily basis, experimenting with seasonal ingredients and methods, developing new recipes and pushing his creativity to produce exquisite pastries that are sculptural, beautiful and delicious. Today his culinary repertoire and technical skills are second to none and Shane is passionate about passing on his knowledge to the next generation of Pastry Chefs.
He is a regular contributor to The Irish Times, The Irish Independent, Food & Wine magazine and other national publications. He also writes a monthly baking column for the Anglo Celt newspaper in his hometown of County Cavan. I made my shells with a pastry bag and a large shell tip to create petite cream puffs. I want to add a bit of lemon curd in them and a little whip cream and dust with powdered sugar. The shells are quite versatile.

They are beautiful. Am very interested in the choux pastry., was my cooking nemesis as a teenager, I could not make cream puffs as big as a palm, light as a feather which opened dry inside as could my school friends mother which he has pretended he made until the school reunion decades later. Thank you.loved this....that being said I mentally subtract every grain of sugar possible yet to get the effect. Interesting to have the firmness of the orange with the lightness of the puff.

I did try the shortbread cookies and it’s easy to make yet very yummy👍
I got to say this was a lovely dessert and it was super easy! I did have to convert some of the measurments and find out what double cream was for us americans... All and all I am definitely going to make this again

Perfect timing! With all the cafes and restaurants still closed, I was going to do afternoon tea for my husband's birthday this week.
Just an update to say the choux recipe worked out perfectly, even with my dodgy piping skills. Light and airy, not doughy like previous attempts, so this recipe is a keeper :)

If you boil the skins first 3 times for one minute and refresh the water each time you’ll have non bitter rind to candy them for 20 minutes. Freeze to keep for next use.

What mixer are you using? I'm assuming it's a Keurig but wondering what specific (if any) model. I have a standard kitchenaid but yours is so nice and quiet and I love the "lid". Thank you in advance. Have a lovely day.

What is double cream called in the US?
Heavy cream.
I wish you have these measurements in imperial US measurement. It would be easier to follow

Afternoon tea...right...so you’re not supposed to eat them all yourself then?
Nice recipes, but I would love to see you try and whip single cream. The fat content is too low to do that. Shame that this is something a pastry chef recommends as a substitution.
Your comment doesn't make sense, if you know that the fat content is too low in single to whip successfully, why do you criticize him for using double cream? Double cream is what most cooks use!!
@@maryrose4712 Yes, but he recommended single cream as a substitute for double cream which doesn't make sense as it isn't possible to whip it. That is what I critizised. He says it at around 4.15 that you can use single cream instead of double cream.
@@Zarainify Single cream, or as we call it here in Ireland, Fresh Cream, whips up just fine. I guess our single cream has a higher fat content than your cream wherever you are
@@BlogWhatTheFruitcake I am in the UK and here the fat content of single cream is too low. I would have thought it was about the same in Ireland.
@@Zarainify Our double cream fat content is 48g p/100ml & single cream is 38g p/100ml which whips fine. Some brands have a light cream which is about 26g p/100ml, definitely wouldn't whip that one. I often make ganache with our single cream and it works really well for that, too. I've had to change some of my ice cream recipes to use only single cream 'cause the mix of double & single is sometimes too heavy!
How could you possibly eat those shortbreads without making a mess? Totally not right for tea.
Opening the door at ten mins will make them flop - don't do it! Great video otherwise
